I just adore them. They are so versatile and tasty!!
You can make them pretty much with anything you have leftover in the fridge or freezer. For someone like me who thrives off of making cost effective meals these are the ideal format. I have made them with leftover meats and cheeses and BAM dinner is on the table for just a few dollars!! Need to feed a crowd in a pinch… not only would this be cost effective but I don’t know a single person who doesn’t enjoy enchiladas. You will be a beloved hostess (or host)! Enchiladas are also a great main course to take to a potluck or or church social.

Turkey Leftover Recipes!! Just saying it makes me happy! I love a good leftover recipe and you know that if you have ever visited this site before. If not, and you are here reading this you need to check out our leftover recipes… Turkey, beef, pork, chicken and even veggies… we got it!!
Now this is going to sound odd but I love turkey leftover recipes that I make a TON of tempting appetizers and side dishes just so people get full fast and leave my dang turkey alone.. that way I can think of something fun to do with that turkey and serve it to you the next few nights!!
Tonight I served my Handsome Husband this delightful treat!! It was a big hit at our home. In fact I took a big pot over to one of our recipe taster’s house too. This is nice cause with just three to four cups of chopped turkey you can get a pot of soup that will feed 8 to 10!!
I love turkey and it’s on sale big time right now!! I am buying them and cooking them just to freeze the cooked meat. This makes it a lot easier to store once cooked and the cooked meat makes great fast meals!! At 0.79 cents per pound how can you go wrong??
One thing that I just adore is leftover recipes. Although I have many leftover recipes on this site, right now I am focused on the gobbler. By day three reheating the leftovers is not appealing to everybody so here is a great idea of what to do with them to mix it up a bit!!
I really enjoyed this recipe but when buying the gluten free BBQ sauce you can always use your favorite but I do recommend not using the sweeter ones like the honey or brown sugar sauces… but even if you do this easy recipe sure is tasty.
Keep in mind… this leftover recipe can be made in the morning or night before and then popped into the oven at dinner time.
Your leftover turkey takes one a whole new life with this recipe!!

Handsome Hubby’s favorite Mexican food side dish is red ride / Spanish rice so I am always looking for ways to mix it up a bit for him. He found this one is richer than normal but did really like it.
From time to time I think about buying a rice cooker but then I wonder about rice dishes like this… I am not sure if you can make them in a rice cooker. Also as much as i would love a fast and easy way to make rice… there is always the dilemma of storage. I have so many kitchen machines and gadgets… I can not imagine trying to find space for yet another.
