Gluten Free Turkey Noodle Soup with Easy Country Noodles Recipe
I know a lot of people tend to make soup with their leftovers. However, this is the soup my Handsome Hubby looks forward to. I started to make this last year and for someone whose favorite way to have turkey leftovers is on a sandwich, for him to ask me for this soup told me immediately that I had a home run!!!

Now this is going to sound odd but I love turkey leftover recipes that I make a TON of tempting appetizers and side dishes just so people get full fast and leave my dang turkey alone.. that way I can think of something fun to do with that turkey and serve it to you the next few nights!!
Tonight I served my Handsome Husband this delightful treat!! It was a big hit at our home. In fact I took a big pot over to one of our recipe taster’s house too. This is nice cause with just three to four cups of chopped turkey you can get a pot of soup that will feed 8 to 10!!
I don’t know what it is that I have about mashed potatoes…. I just adore them!! One of my favorite side dishes ever. That is the reason I always make wayyyyyy to much cause I am convinced that I am going to eat the leftovers the next day for lunch
However, my cooking brain never seems to remember that I tend to forget to have that for lunch the next day. So many times my leftover mashed potatoes go to waste.
Well that is no longer going to be the case…. I have a NEW idea for them. I made them into potato soup!!
Other than the 1/2 and 1/2 I always keeps these items in the house… so its a pretty easy fix for a nice lunch or dinner. In fact we just made our potato soup and served them with tasty BLT sandwiches!!

Down Home Gluten Free Chicken and Dumplings Recipe
I love to make recipes that use leftovers. Have you ever baked a chicken or bought a rotisserie chicken and had leftovers… instead of letting the chicken sit in the back of the fridge going to waste.. Make something with it. If I don’t have time to do something with it that day I put it in a Foodsaver bag and freeze it for another day. Whether you are using frozen chicken, left over rotisserie chicken, or even if you cook some chicken up just to make this recipe… it’s just an awesome chicken dinner recipe.
Chicken and dumplings was a culinary delight that I struggled with making gluten free. Handsome Hubby likes more of a Southern style with a thin flat dumpling, which was easier to make gluten free. However, the rest of the family prefers light and fluffy, which was much more difficult to make gluten free. I tried tweaking recipes till my eyes were rolling back into my head. Then I started to make my own Baking Mix using Cup 4 Cup. As any reader may know, I enjoy cooking and baking with Cup 4 Cup. Now I have found a way to incorporate it into this classic comfort food.
Oh Boy!! I found some leftover turkey in the freezer today!! Jackpot!! I wanted a quick and easy dinner and this bag of turkey was the gateway to having just that.
As I had the freezer bag of turkey defrosting I went through the pantry to try and figure out what I was going to make with the turkey…. Although I was tempted to just make some yummy turkey sandwiches I realized I wanted something warm since its been so chilly.
When I served this soup for dinner I knew it was tasty but when Handsome Hubby proclaimed it to be a big hit I was thrilled!! So much so he asked if we could have it again for dinner tonight!!
