Now this is going to sound odd but I love turkey leftover recipes that I make a TON of tempting appetizers and side dishes just so people get full fast and leave my dang turkey alone.. that way I can think of something fun to do with that turkey and serve it to you the next few nights!!
Tonight I served my Handsome Husband this delightful treat!! It was a big hit at our home. In fact I took a big pot over to one of our recipe taster’s house too. This is nice cause with just three to four cups of chopped turkey you can get a pot of soup that will feed 8 to 10!!
I love turkey and it’s on sale big time right now!! I am buying them and cooking them just to freeze the cooked meat. This makes it a lot easier to store once cooked and the cooked meat makes great fast meals!! At 0.79 cents per pound how can you go wrong??
One thing that I just adore is leftover recipes. Although I have many leftover recipes on this site, right now I am focused on the gobbler. By day three reheating the leftovers is not appealing to everybody so here is a great idea of what to do with them to mix it up a bit!!
I really enjoyed this recipe but when buying the gluten free BBQ sauce you can always use your favorite but I do recommend not using the sweeter ones like the honey or brown sugar sauces… but even if you do this easy recipe sure is tasty.
Keep in mind… this leftover recipe can be made in the morning or night before and then popped into the oven at dinner time.

Oh Boy!! I found some leftover turkey in the freezer today!! Jackpot!! I wanted a quick and easy dinner and this bag of turkey was the gateway to having just that.
As I had the freezer bag of turkey defrosting I went through the pantry to try and figure out what I was going to make with the turkey…. Although I was tempted to just make some yummy turkey sandwiches I realized I wanted something warm since its been so chilly.
When I served this soup for dinner I knew it was tasty but when Handsome Hubby proclaimed it to be a big hit I was thrilled!! So much so he asked if we could have it again for dinner tonight!!

I just adore chicken pot pies. To me it just screams comfort food. One of the things I love about making them is that it’s a great way to use the veggies in your fridge and leftover rotisserie chicken!!
However, the negative side of that is making a gluten free pie crust. To me, it’s yummy but it takes a lot of work. So I came up with this idea to get the taste but without the hassle of making the crust.
Now I do love to make the biscuits. Click HERE for the Real Deal Biscuit Recipe. But I have made them so many times that its a pretty quick process for me now. However, there is also some decent gluten free biscuit mixes out there that will work as well.

Gluten Free Turkey and Green Chili Enchiladas in a Creamy Chili Sauce
I woke up this morning craving Mexican food. The only problem is that I have a refrigerator full of turkey leftovers from Thanksgiving!! I don’t make a turkey just everyday and I would hate to waste such a great bird. So I needed to find a way to collaborate my two desires. And that is how the Turkey Enchilada Recipe was created.
I am a fan of creamy enchiladas but really wanted to spice it up a bit. So this zesty cream sauce hits the spot. Now I just have to find a way to take my leftover gluten free stuffing and make it into a Mexican side dish. Well that didn’t work out so great but hey I have a tray of yummy enchiladas!!
