Cloud Bread Strawberry Shortcake Recipe (Naturally Gluten Free)
Cloud Bread is “the thing” in the GF world lately… I have seen so many people using it as bread or buns… but why not think about it in a sweet way….
Well last night we took cloud bread to the sweet side… I was pleasantly surprised when it worked GREAT in the place of the “shortcake.” Who would have thought it would be so easy to reducing the carbs of this traditional dessert!! Fantastic!

Gluten Free Blueberry Bars Recipe
There was a huge debate over whether or not this recipe would go up. Some loved this finished product and some not so much…. grab a little cup of coffee and let me tell you about it.
I was thinking about how much I love lemon bars one day… yes, I know, I have some pretty random thoughts. And I got to wondering… Why is it that we only make that dessert with lemons? I could not come up with an answer. Quickly I scanned my brain to figure out what fruits were on sale… and the wonderful blueberry came to mind!!
I tossed the fruit in my Vitamix and whirled it into a wonderful and beautiful colored juice, then made the bars similar to my lemon bars.
The end result is a slightly sweet desert, not for lack of sugar, but it’s ideal for people who want a dessert but not to be smacked in the face with the sweetness of it. I thought the pretty purple color was nice. It’s also pretty unique dessert so if you wanted to share this at a pot luck or a BBQ I am sure it will be the talk of the table!!
Now even though I was not a huge fan of this dessert, out of everybody who tried it more people liked it than didn’t. In addition, the people who didn’t like it just said they like sweeter desserts… so that is the story of the blueberry bars that almost didn’t make it.

Gluten Free Loaded Mashed Cauliflower Recipe
As it turns out cauliflower is not the evil nemesis I had thought it out to be. I have been making it in a variety of ways and with much surprise to myself, I have been enjoying it immensely!!
Today’s recipe was inspired by my Amazing Mother and Father In-Law. They do a lot of low carb cooking and they told us that they enjoyed mashed cauliflower. Still being a little skeptical of that vegetable I remembered a good rule of thumb from my kitchen… adding bacon and cheese always makes everything better. That let me to want to bring in the flavors of my favorite baked potato to my healthy mashed cauliflower. Of course, the end result of that “kitchen golden rule” does tend to make the mashed cauliflower less heathy….. yet delicious!!
Now of course many people have made mashed potatoes. And I have heard about people using cauliflower instead of potatoes for years, or at least since the Adkins Diet was in its heyday. So today’s recipe is less of a recipe and more of a testimony… to try and inspire you to try it. I have waited all these years to try doing this because of my belief that I wouldn’t enjoy it. Why take a wonderful dish like mashed potatoes and make it all better for you. That was part of the indulgence for me. Well let me assure you… this is so tasty and although I am not going to pass up on my friend the spud forever, it is nice to have something different. Trust me, if this is enjoyable for a cauliflower “hater” as myself… just think how much people who don’t distrust the veggie will enjoy it!!

Gluten Free Product Review – Hail Merry Chocolate Almond Butter Miracle Tart

I do recommend trying these tarts of total decadence but I do not recommend sharing them. You might think I am being greedy … and maybe I am but trust me after the first bite you will understand why I say this.
Tell our friends about them and especially if you have a dairy free friend, a Kosher friend or a vegan or Paleo friend!!
