Taco night is always one of my favorites, ever since I was a child!! It’s one of those meals I could eat once a week, even though I don’t. However, in my home, I have a two problems with taco night…I have a difficult time cooking small meals and my eyes are always bigger than my stomach. Growing up, the only type of bean I ever had was refried, and I loved them!! However, in general, I was not a fan of beans at all. I had all kinds of preconceived notions about beans. And I am woman enough to admit that I fell for the anti-bean propaganda. Until one day I was at friend’s house for dinner and felt obligated to eat them. My bean world opened up that night. I learned what a culinary delight beans can be. If you are like me and THINK you do not like beans, but really never gave them a fair shot. Here is your chance. This crazy easy bean salad is sure to be a hit. I had this at a potluck a few years back and insisted my co-worker give me her recipe. I have taken it to several potlucks myself and always get rave reviews. This is a good recipe to keep on hand if you know anybody with Celia Disease, Gluten sensitivity, or are on a gluten free diet, because every ingredient is gluten free and full of taste!! This is a great side dish for heavy Mexican food because it is so much lighter and healthier than refried beans. I have been trying to make a gluten free pasta dinner using shrimp, based on a description of a meal that Handsome Hubby had on a recent business trip dinner in Finland. I think I have finally got it. Now mine, of course, has a million times more garlic. Everything is better with extra garlic!! The pasta is relatively new to me. I was shopping at the Gluten Free Country Store in Gilbert Arizona recently and the bright orange box caught my attention. What is interesting is that this box is not in english, but the manufacturer has placed an English translated sticker on the back. Thank goodness, because I might not have purchased the pasta otherwise. That would have been a big loss for me because this pasta is delicious!! In addition, many Italian dishes have chopped parsley. I used chopped spinach to get a little nutritional boost over the parsley. Plus the spinach gives a great color to the dish and it’s a great way to use up some of the leftover spinach!! Oh and don’t forget the garlic bread… nothing says italian pasta dinner like garlic bread.
