Recently I told you about a fantastic place in Mesa Arizona called Cafe 8.  I went there and raided their dessert selection like a pirate grabbing booty.  Well, ummm, considering I am the one who ate alllllllll those desserts from that article I probably don’t want to think about booty right now I might get a little blue.  Big Blue Bootie… let’s not even go there.

As I mentioned in that article, after having such a wonderful experience with their baked goods, I couldn’t  wait to get back and try their dining menu.  As we drove down there, I spent the entire time on my phone looking at the menu as Handsome Hubby drove.  Then upon arrival they seated us and I studied their menu again.  The problem is there is so much I want to try and just not enough stomach to eat everything.

It was early afternoon so we finally decided that Handsome Hubby would have the roast beef sandwich and I would have a meatball sub, both having the soup of the day and a promise to come back soon so that we could try more items.

The soup of the day was an amazing Tomato Basil.  Rich and hearty.  Yet it did not taste like there was any cream so it might have been dairy free as well!!  My meatball sub was amazing.  Crusty Italian bread with flavorful, yet not overpowering, meatballs.  Don’t even get me started on the melted cheese!!  When being served my eyeballs almost popped out because it looked so amazing!!  Handsome Hubby’s roast beef sandwich… oh where to begin?!?!?!  We read the menu and it sounded great BUT we had no idea what we were in for.  It came out and surprised us right away.  We were expecting gluten free lunch meat roast beef.  NO SIR!  This is the real deal.  This was actual roasted meat, NOT cold cuts / lunch meat.  We quickly swapped half of our sandwiches to each other and both bit into our first bite.  We love roast beef sandwiches but this was BEYOND any I have had.  I expected the beef to be a bit tough but tasty.. you know, where as you bite it kind of pulls out of the sandwich.. not that it’s bad, but that is just what roast beef does.  Well not at Cafe 8 it doesn’t!!  As we oood and awwwd over the roast beef the Chef / Owner let us know that he actually uses prime rib.  I have never ever ever had such a wonderful roast beef sandwich, even when I have made it myself.

Basically lunch at Cafe 8 ROCKED!!  LOVED IT!!  Cant wait to go back and try more stuff.

Also important to let you know…. they will be having their later “winter” hours soon and they will be adding more items onto their menu.  However, most importantly… they do not serve wine but you can bring your own… with NO CORKING FEE!!  That’s right… I said no corking fee.  I am so excited about going back for dinner soon and yet, I am bringing my friend Red… red wine that is.

After spending most of my childhood in Arizona, I grew up eating Mexican food.  Now I am not a huge fan of spicy hot foods, but thats the beauty of making Mexican food at home, you can control the heat and the portion sizes.  Lets face it, Mexican restaurants tend to give crazy large portions.  I always like to have smaller portions and eat it more often, I feel less guilt that way.

By the way… although it marinades in the tequila, the booze cooks off, so this is kids safe.

This recipe calls for making shells out of corn tortillas, but this can become easier if you want to purchase some pre made  gluten free corn shells.  So imagine tossing your chicken in the marinade before you go to work and then quickly cooking everything when you get home.  You will be the King or Queen of your casa with this tasty taco recipe…

I adore crab cakes!!  It use to be a treat I would have as an appetizer at seafood or steakhouse restaurants, “back in the day”  Of course, no place serves them gluten free so I haven’t really had them in awhile.  Then one day we were shopping at our local Costco and I saw a container of lump crab meat.  I stopped dead in my tracks and the first thing that came to my mind was crab cakes.

So I remember that many restaurants have tasty crab cakes, but that many have bad ones as well.  On the drive home I think back to what made the difference between good crab cakes and bad.  I liked the ones with large pieces of crab and didn’t have a lot of filler.  But crab cakes NEED a binder.  So there is a fine line between making a crab cake with good binding and “filler.”  But don’t forget… you need the crumbs to also make the “crunchy” and / or “crispy” so I believe I have a good mixture of delicate crab cakes that have a nice crispiness to them.

This recipe also has a “dipping sauce”  Now these are delicate crab cakes that really are not the kind you pick up and dip into the sauce.  Yet this sauce is one of my favorites that I use for a lot of things… it’s easy and tasty and really works well with these crab cakes.

These are wonderful appetizers to serve at your upcoming holiday parties, date nights, during a “girls night,” while working on holiday crafts, or to a game day recipe to enjoy while watching your favorite sports teams.  However, do not let that limit you… I could really enjoy these while watching “The Walking Dead” or during a Netflix movie night with my Handsome Hubby.   But also consider it a great main dish recipe… with a side of veggies and a salad it would be just delightful!!

I had several tasters for this recipe and it was as big hit.  I am sure you are going to enjoy these as much as we did in the development of this tasty crustacean creation!!

If you are not familiar with Chebe, you need to be.

In Brazil this type of bread is not uncommon or unusual.  Chebe brought this to the US and  quickly learned that this tasty bread with the soft center and crispy crust had a whole new market that never predicted… the gluten free consumers quickly made them aware of how this incredible product was in demand for people who could not have “regular” bread.

This mix is easy to make, simply by adding some cheese, water, oil and eggs into the dry mix you are ready to bake your fresh Focaccia.  With a mild rosemary and basil flavors of the Focaccia makes a wonderful bread option for those with Celiac Disease or any other Gluten intolerant person.  Actually several non gluten free people in my family absolutely love this bread and request it often as a side bread to be served with salad dinners.

We served our focaccia bread with a nice Italian dinner and the flavors went so well together and was a nice alternative to garlic bread.  I think next time I am going to try and make an olive oil dipping sauce that you get in Italian restaurants!!  Oh wow, I am off to go tell hubby that it’s time for a pasta dinner!!

We have been working so hard on this website.  It really has been a labor of love.  Handsome Hubby and I both work full time jobs in addition to almost full time hours we both put into Connect Gluten Free.  With these long crazy days having a crock pot meal is truly delightful.  Its wonderful because while we are working away at the computer I can smell our dinner drifting across the room to my nose.  My stomach starts to growl and beforeI know it this easy meal will be enjoyed.  I love to serve these with a salad.. something nice and crisp, fresh and cold.  Yep this is a hit for me.  But then again, when is a chicken wing not.

By the way… as I have mentioned before chicken wings are one of my favorites but Handsome Hubby, not so much… however, when we had this for dinner the other night he went back for seconds!!  He told me several times during the meal that he really likes these wings.  WOW!!  Now if I can get that kind of response out of someone who is not much into wings, think of how much our family is going to love them when you severed them up for dinner tonight!!!
