This is another recipe in our Slow Cooker Shredded Pork Roast Recipe Series!!  

I need to let you know there is a good and bad side to this recipe…  The good is that it’s not made with deep fried pork.  The bad is that it is not made with deep fried pork.

Let’s face it, deep fried anything taste wonderful.  REALLY wonderful.  However, I like to try and keep a limit on what I deep fry so that way when I do deep fry something I feel less guilty and can enjoy it that much more.

So as I mentioned right away this is part of the shredded pork series.  You start with an easy crock pot pork roast (click HERE for recipe) and you can turn that into some amazing dinners!!  Just think…It’s amazing that you can get 6 servings out of 1/2 lb of shredded pork.  Amazing and wonderful.  I love to create these dishes that can really spread your gluten free grocery budget because as we know we have to pay more for most gluten free products.  Soooo by making this cost effective meal for my family I feel like I am lightening the load on our budget.  Not to mention it’s pretty tasty.

So I need to confess. I am not a health nut and I do not like many healthy things. Oh sure, I KNOW what I should do and what I need to do, but that is usually not inline with what I actually do. Please don’t mistake that for not wanting to do the right thing. But I am already missing the gluten from my world, making me eat horrible tasting food is just asking a lot.

HOWEVER….

I have found something I am very impressed with and that might change my attitude. A company called INBalance Health Corp has approached me and asked if I would be willing to try their product, INBar. After explaining that I am willing to try their product but that the review I will do of their product is simply of my own opinion and by sending me samples, it will not mean I will give it a good review they were still willing to send me the product. You will see from my disclosure below, I have been provided with free product to try. But I also want it to be known that I have also purchased product in addition to the sample sent.

After receiving their product I waited a few days to try the first bar. Why? Because I am not much of a fan of protein / nutrition bars. With that being said I must admit I was curious because I had been reading about the product on the company’s website. They make some very interesting statements…

Those are some impressive statements. Especially when I know that Diabetes has effected my family and is always in the back of my mind!! But considering that my attitude gets in front of my desire when it comes to doing the correct thing for my health… I was going to have to try those bars. But of course I was going to make Handsome Husband do it with me.

WOW!! I would never have guessed it was going to taste so SO SOOOOO good. I hope that I do not offend the folks at InBalance but I am not going to lie… I was really expecting not to like this product. And I won’t lie about the fact that they don’t look great… they look like ALL protein bars and if you ever had one they never look great, but then if I think about it… it’s not like they are going to look like Hostess Cupcakes or something. Anyway, as I was saying… They actually taste good. Over the next few days we shared the bars to taste test all of the different flavors. So that we could have two opinions for the product review.
Let me give you a little breakdown of the flavors I tried….

Chocolate Mint. I will admit this is the flavor I expected to like the most and ended up liking the least BUT WAIT!! I still LIKED it, it has a chocolatey flavor which is always a hit to me, I just thought that this mint chocolate fan would choose this as the top flavor. As it turns out the mint is tasty but a bit earthy. I am a fan of mint chocolate… as in ICE CREAM. You know that “fake” mint. This is actual mint and people who like actual real mint are going to love this bar!!

Chocolate Butter Crunch – This was a pretty cool bar. Because they do not have any nut ingredients this bar is pretty tricky. At first I thought it was a peanut butter bar… but NO NUTS! So it’s actually made out of sunflower SEEDS!! I thought this was pretty innovative and creative way to meet the needs and desires of people and yet offer a SAFE alternative!! And hey… it’s yummy too!! Way to go INBar!!

Cherry Chocolate – I did think hubby would like this more than me. Why you ask? Cause he eats those nasty chocolate covered cherries. I bet you are surprised with my chocolate addiction that I don’t… well that’s because those are not real cherries they are freaks of nature processed cherries. So the name of this bar made me think that he would like it better. Well, I am wrong. I really dug this bar because it didn’t taste like those fake nasty cherries, it tasted like really cherries.. those awesome cherries that I wait for all year long for them to come into season. This bar is a hit because of it’s really cherries and chocolate taste. Fantastic!!

Chocolate Fudge – Ok, this bar has a tempting name and a great taste to go with it.

Strawberry Banana – I figured Handsome Hubby would like this much more than I would. Like I am a fan of the “fake” mint flavoring in foods, he is a fan of the “fake” banana flavoring. We both LOVED this bar. But I want you to know… there is NO FAKE FLAVORING HERE!! I was so loving this bar because it tasted like real bananas and real strawberries. What a treat!! I was so surprised that this was one of my favorites!! YUMMMMMMM!!!

Cinnamon Swirl – This one I did not expect to enjoy. Let me just say whenever I see a photo of a cinnamon roll on anything gluten free, I figure it’s only going to let me down. Well let’s be very clear here… INBAR DOES NOT DISAPPOINT!! This was actually both my favorite as well as Handsome Hubby’s favorite!! This flavor tasted awesome. Are you biting into a Cinnabon? Well no, BUT you are going to really enjoy the flavor of this bar!!

Now that we have talked flavor lets talk about the numbers and fact!!

The sodium and sugars are lower than most of the bars it competes with… and you only have 12 net Carbs which is also lower than most of the bars it competes with.

How can they make me forget that this is a protein bar?? They make me forget with the flavor. That really is what it boils down to for me. I can’t get over the flavors of this product. Coming from a woman who HATES protein bars… I am so impressed. After I ate the sample they sent me I went out and purchased more bars here locally. In the future I might purchase them on the website because they have an interesting rewards program (link below). I hope you check them out. Try one bar and I am convinced you are going to be sold like I was.

Now you know me, I don’t sugar coat things… ok maybe an ironic choice of words consider that these bars have no added sugars. BUT the only negative is the price. I know a lot of readers are on a budget BUT I want you to hear me out. They are worth every single cent because here is a bar I will actually eat. I went to several of my local grocers that I found on the product locater on the website. I found that these bars are always the most expensive bars out there. For example, they cost 2.99 a bar at the grocer closest to me. There were 4 other bars at that price so they are not the ONLY one priced at $2.99 a bar. There were cheaper options as low as $1.00 but those were NOT gluten free, not to mention they could not claim 1/2 of the things we talked about here today. I also wanted to mention that these bars were on sale for $2.69 the last time I visited the store. But the most important thing to remember. I truly believe this is the first protein bar I have ever enjoyed. And considering the other information we have discussed about these bars I do believe they are worth the money if you are wanting this kind of product in your life.

HEY!!! I am woman enough to admit when I have been bested!! Let me be clear. I went into this product review dreading the bars. INBalance has made me fan of protein bars!! I am going to buy these for both me and Handsome Hubby to eat because I can not imagine a better option out there!!

This Product is a good recipe for people with Celiac Disease, Gluten Sensitivity, Gluten intolerance or on a gluten free diet because none of the ingredients contain gluten.

Right now we are approaching the second biggest food day of the year.  Right after Thanksgiving the Big Big Game (who will remain un named for legal reasons) is just around the corner.  If you are struggling with any last minute idea for what to serve that is gluten free… I have just the idea for you…

I know I have mentioned it a few times I am such a wing woman.  Now of course, when I was dating my now husband I would never eat wings or ribs in front of him.  Let’s just call it for what it is… it’s hard to look like a lady when you are eating them and in my case, usually getting covered in sauce and dripping dressing down my shirt.  Ya I told you I REALLY enjoy wings!!

The other day I was looking at the BBQ sauces when I noticed a bottle of Sweet Baby Ray’s Kickin Bourbon Wing Sauce and Glaze.  the “NEW” across the bottle is what actually caught my attention.  I picked it up and turned it over to read the ingredients and much to my surprise it states “GLUTEN FREE”

SOLD!!

Honey… guess what we are having wings for dinner tonight!!  Of course, I served it with a large salad with lots of veggies (trying to get forgiveness points for the fact that I am going to mac down on a bunch of wings).

Handsome Hubby loves it hot and spicy.  I not so much.

This sauce was a hit for both of us. It was spicy enough to make him happy.  It was also spicy for me to enjoy without the painful burn of too much spice hot flavors.  I dipped mine in some homemade ranch dressing (recipe HERE).  He did not.

Now this was an incredible dinner.  But if I were to serve these to my friends, gluten free or not, they would be a huge hit!!  So consider serving these as an appetizer or main dish at football game parties, pot lucks, or any other time you want to dazzle your gluten free and non gluten free eaters.

Well the day finally arrived.  The much anticipated release of the new gluten free pizza by Pizza Hut.  The beautiful partnership of Pizza Hut and Udi’s has been something that many Celiac’s have dreamed of.

As soon as I got off from working my “day job” Handsome hubby and I hit the road and drove the 24 minute drive to the closest Pizza Hut that had the gluten free pizza.  As we got closer and closer I got more and more excited.  We discussed our dining options on the way there.  Although much more rare these days, we were really hoping this is one of the dine in locations because making that 24 minute drive back with hot pizzas just didn’t seem like a fun thing to do.  It was either that or grab some soda and find a park and have an impromptu pizza picnic this overcast, breezy and lightly sprinkling day (a rarity in AZ).   As we pulled up into the parking lot I was almost giddy with excitement…. thankfully this particular location had a dine in option!!  JACKPOT!!

We ordered our dinners and enjoyed the atmosphere of the Pizza Hut, caught some news blurbs on the TVs, and chatted about our work days as we waited for the pizza to be made.  The manager, over the phone went over the procedures with me and I have been reading a lot on the Internet regarding Pizza Hut’s gluten free certification (although I did forget to inquire about whether or not it was a dine in location).  After my chat with the manager I felt very comfortable and excited to try their pizza.  It was really nice to eat out because that is not something that we do often.  AND this particular location had beer and wine for sale.  I doubt it would be gluten free beer but it’s nice to know that wine was an option!!

The pizza was delivered to the table in box to help reduce cross contamination for me and also with it’s own serving spatular.  I will admit to you, if you keep it just between us, I didn’t need my own spatula.  I ate the pizza right out of the box.  I know Ms. Manners or Emily Post would have had a cow, but if you are old enough to know who they are then you know there is no hope for me, and if you don’t know who they are then you need to Google it.

I know Udi’s and I know that I enjoy their crust.  After my conversation with the manager, I feel comfortable with Pizza Hut’s gluten free processes and staff training.  And after my first slice I must say that my pizza adventure was a success.  It tasted great and reasonably priced at $9.99.  I enjoyed it.  Although I did forget to sneak in some gluten free ranch dressing for dipping.

Now you know me and I have my opinions to share… I had a hard time finding a Pizza Hut location that carried this gluten free pizza.  I have included the link below that I just found.  However I called 5 different locations near my home and none of them had any clue what I was talking about.  I found that incredibly frustrating and from what I am reading on the Internet I am not the only person experiencing that issue.   My main complaint is that limited locations is just not convenient.  Until they expand their availability I won’t be able to have this very often.  Yes, I know the pizza tasted great and I REALLY enjoyed it but 24 minute drive in each direction through  a newly developing city that is experiencing much traffic and road construction is just not top of my list.  I have a Pizza Hut delivery/carryout location 1.2 miles from my home and I would love to be able to swing by there and grab one.  The thought of actually having one delivered is even better!!

Now for my “wish list”…  The collaboration between Udi’s and Pizza Hut is a success and I can’t wait for you to try their outstanding product.  I also hope that this means that Udi’s will collaborate with other restaurants to do the same thing in other formats like in sub shops or breakfast drive thrus.    I hope that Pizza Hut will have great success with this product and expand their line… I can imagine how good some wings would be with my pizza!! (Hint, Hint!)

What it  boils down to is that I am Celiac and I enjoyed my dining experience was had no ill effects from doing so.  I hope you give it a try… remember the more support they get the more likely they will expand the menu and encourage other companies to follow their lead.  So even if it means that you have to drive a bit to support this venture, I would highly encourage you to do so!!  This is definitely a win for the Celiac and Gluten Free Community!!

It was a like a beacon of shinning light.  I could almost see the skies open up and a beautiful light was shinning down….  I was floating down the aisle and nobody else in the world existed at that moment except me and Mike.  Mike as in Mike’s Hard Lemonade that is!!

That is how it felt when I saw Mike’s Hard Lemonade’s booth at the Gluten Free Allergen Free Expo in Phoenix recently.  As I walked closer to the booth I started to get giddy!!

Look, I will admit it…. other than in cooking, I never acquired the taste for beer.  I love me some wine.  Hand me a margarita, but I will never say the words “oh how I miss beer since being diagnosed with Celiac Disease”.   What I do miss are this fun flavored drinks that are sweet and tasty.

I waited in line to talk to the Mike’s representative.  She was a delightful woman who was more than happy answering all of my questions.  I told her how thrilled I was to see them at the GFAF Expo because that must mean that the rumor they are gluten free was true.  She referred to their term “crafted to remove gluten”  and explained to me that yes the product initially starts off as a gluten, but that after distilling it becomes gluten free.  She told me that it’s tested by an independent agency to confirm that the gluten has been removed to less than 5 parts per million (ppm).  For a product to be considered gluten free it must be less than 20 ppm per FDA regulations.  Their products are not currently going to be labeled GF or gluten free or certified gluten free because of the current labeling regulations in place.   Keep in mind, if this was a food product it would be marked gluten free but they do not have the same labeling regulations in place for alcohol so they can not currently mark their product gluten free.

So, as with all gluten free products, we have to make the choice for ourselves to determine whether this is a product for us.  I provide as much info as I can to help you make an informed decision, but ultimately it is up to you… and that goes for any product review or recipe on this website.   Now for the sake of taste testing this product.  I have had one or two of the Mike’s product every night for the past week.  I did NOT get sick or have any of my typical gluten side effects.
