Last year I did a product review on another Starfish brand product, their crispy breaded shrimp (If you want to check out the shrimp review click HERE).  I loved it so I was really looking forward to this crispy battered cod.  Battered cod is such a treat for me, I have always loved it and would be listed under one of my favorite meals.  And let’s just face it, being gluten free means it is incredibly hard to find and not even possible in a restaurant.

So knowing what a treat breaded cod is, and having such a good experience with Starfish’s crispy breaded shrimp, I can not tell you how disappointed I was in this product.  I was crushed!!

I baked the product per the directions and it was NOT crispy.  In fact, the batter was mealy.  The texture really ruined the whole experience for me.  Handsome hubby did not enjoy it either and we ended up going out for dessert.

I really wanted to love this product, not only for being such a favorite meal for me and it was gluten free, but also because the box states 0 trans fat, Soy Free, Milk Free, Egg Free, and Peanut Free.  It is also marked as a sustainable seafood being wild caught, all natural.

Now of course… I did BAKE this product, I have no doubt that if i were to deep fry it the whole experience would have been different!!   Let’s all just agree… frying makes everything better!!   BUT I didn’t enjoy this at all so I wont be purchasing it again to find out if in fact deep frying makes it better.  I would not purchase this specific product again, but since I had such a good experience with their shrimp I would try other gluten free products of theirs.

This product is a good product for people with Celiac Disease, Gluten Sensitivity, Gluten intolerance or on a gluten free diet because none of the ingredients contain gluten and is packaged as a gluten free product.

While out with some friends I, the only person at the table who is gluten free, enviously watched them all devour a plate of deep friend zucchini.

That’s fine… sucked at the time but on my way home, I stopped by the market and picked up zucchini.

Joke is on them… while theirs was a frozen product deep fried at the restaurant, mine were fresher, better, crisper, and best yet…. gluten free.  Oh and my serving size was not limited to 2 or 3 each.

With my evil grin and a small dipping bowl of gluten free ranch dressing I turned on some Netflix and enjoyed my delectable treat!

As I have confessed before.. we are serious dippers around here.  If I can dip something, whether i should or shouldn’t, I do.

Although gluten free ranch is my go to, every once in awhile I like to mix it up.

Here is a nice Honey Mustard Dipping sauce that is easy to give a little extra kick if you so choose to do so… just add as much horseradish as you please.

With this tasty sauce the possibilities are endless… pork, beef, chicken, nuggets, I be this would even be good on gluten free breaded fish sticks!!  Don’t forget you can also spread a thin layer on your favorite sandwiches!!

I use to love making angel food cake.  I learned how to make it years ago when I had a new co-worker tell me that her mother use to make her angel food cake every year for her birthday.  I was so touched by her story and knew that her mother lived on the other side of the country.  So I taught myself how to make the cake just to surprised her with it for her birthday a few weeks later.

It was several years later, after our friendship blossomed, that we were reminiscing about how when she first came to work for that company how I made her a birthday cake.  That is the day I found out that she did NOT like angel food cake.  I was so confused and reminded her that she told me that she said her mother made it for her every year… she told me that her mother did make it for her every year but that it didn’t mean she liked it.  OHHHHH what a laugh we had.

To this day I can not eat an angel food cake without thinking about her childhood birthdays.

After finding out that Kinnikinnick had a gluten free cake mix I was thinking of my friend’s birthday as I blew the dust off of my angel food cake pan like I imagined she blew out the candles on her birthday cakes.  I was excited to have an angel food cake again.  It’s been so many years!!

Well once again, Kinnikinnick did not disappoint!!  I made the cake per the package directions and a short while later I was eating sweet and sticky angel food cake.  The angel food cake was so good that I had to take it over to a friend’s house so that I didn’t eat the entire cake.. because that was my first thought.

I don’t know how long its been since you have angel food cake but I gotta tell you… this was so tasty that it won’t be long before I have it again!!

It’s basically summer here in Arizona.  The temps are in the 100s and sometimes I really just don’t want to heat up my kitchen any more than it already is just to make dinner.

One of our favorites around here is Gluten Free BBQ Chicken Salads.  Now not only do I not have to heat up my oven, making my kitchen crazy hot, but also I get to use up leftover chicken!!  Anybody who even occasionally reads my recipes will know that is a BIG deal to me.  I love cooking with leftovers and making it into something new!!  Of course you don’t have to use leftover chicken if you don’t have any… but it is nice to know that last nights rotisserie chicken will look completely different in tonights BBQ Chicken Salads.  Or if you have some chicken in the freezer you can cook it up and use it to make this recipe.  So whatever you have on hand.  Just remember, it doesn’t take a lot of chicken to make these salads fantastic… you would be surprise how far your chicken will go with this dinner!!
