Almond cake is something that can be addictive.  It’s one of my favorite cakes!!

I have found almonds are something people either love or hate.  Almond flavored desserts are even more so.  Personally, I love them but I know that many people in my family are not such fans.  I can not understand this!!

This cake is going to be great to take to a pot luck,  church social, back yard BBQ, it’s also sweet and delicate enough to serve at a baby shower or afternoon tea…  and don’t forget Brunch or holiday breakfast!  It’s also easy to double and make extras, I know this because one of these cakes never seem to be enough.  One thing about this cake that makes it one of my favorites is that it stays moist for a long time.  You know how some deserts you have to eat that day or the next  before it starts to dry out and get crumbly… especially with gluten free stuff.  Well, not this cake!!  Super moist and flavorful to the max!!   Gosh, just talking about it has me wanting yet another slice.  Maybe I will run to the store to stock up on some almond paste.

Recently I did a product review on a Dr. Praeger’s Potato Crusted Fish Sticks.  I must say it wasn’t the best review because although I did not have a terrible experience,  I did not have a great one either. However, as I mentioned in that review I wanted to try some of the other products because I did see a lot of promise in the company and the fish, I just didn’t like the crust on their fish stick.  (click HERE for previous review and compare!)

The good folks at Dr. Praeger’s reached out to me and told me that since the previous review, they have actually reformulated their gluten free breading and asked me to try their product again.   I am so glad they did.  I can not tell you how the new breading is like night and day from their previous.  It was crunchy and had great flavor.  As before, the fish itself had great flavor and texture.  I really enjoyed this gluten free fish fillet.  In fact, Handsome Hubby liked them and he is not a huge fan of fish.

This product line really speaks to me because it takes a “guilty pleasure” and makes it A LOT less guilty!!  These rice crusted fish fillets are low in saturated fat, no trans fat, low cholesterol, and wild caught Alaskan pollock fish.

I would recommend this product and I am going to be tasting some of their other products and I will keep you posted on them as well!!  Check out their website and social media as well!!

If your grocery does not carry this product I would recommend you asking for it because its a very tasty fish fillet!!

This product is a good for people with Celiac Disease, Gluten Sensitivity, Gluten intolerance or on a gluten free diet because none of the ingredients contain gluten.  Please note that this product is made in a facility that uses wheat.  However, it is marked gluten free and I have eaten several of these products and have never had any Celiac problems and will continue to purchase this product.

I grew up eating frozen pot pies.  It is what it is.  Sometimes the cheap ones which were like fifty cents a piece (back then) or occasionally a really nice one like Marie Callender’s on those “special nights”    I am not going to claim my mother used to make these from scratch for me just as I won’t claim I did very often.  Let’s face it…. buying them frozen was easy..  Well these days, being Celiac, easy is not an option.

But that doesn’t mean you can’t have this ultimate comfort food!!  Yes, it takes longer and if you are making a home made crust it becomes a labor of love.. Whats even better??  the fact that these reheat BEAUTIFULLY!!  In fact, when you cut it open the night of, your filling will spill out onto your plate.  It holds together much nicer the second day.

The other day, a group of us went out to a local restaurant.  It was a great place and I really enjoyed my bun-less burger.  But the talk of the table was their chicken pot pies.   Nobody even ordered any, because it was too early in the day, but yet I haven’t stopped thinking about them since.

That is until last when I bit into this delectable pie.. and the best part of it was… I didn’t even think about it being, or me being, gluten free.  It was so good that I don’t think anybody would have guessed… that is if I had been willing to share.

Last year a friend of mine talked about how she watched her daughter eat a corn dog at Disneyland how she hadn’t had one in so many years that she actually considered eating one even if it did make her sick.  That got me thinking about how long it had been since I had one and then I couldn’t stop thinking about corn dogs… I went into a corn dog frenzy.

I created a fried corn dog recipe that I absolutely love (click HERE for the recipe).  As much as I loved them they were fried and a lot of work so that is what fueled me to make a baked version as well (click HERE for the recipe).   But even tough that is much less work… Let’s all just agree… it’s even easier still to purchase them in the frozen section of your grocer.

I was absolutely THRILLED when I learned that Foster Farms created a gluten free corn dog.  I had a bit of a hard time finding them but when I did I excitedly grabbed a box and head home with a smile on my face and a skip in my step.  On the box they gave a few ways to heat it up; I decided to go the oven route.

Crispy and juicy, it was AWESOME!!  just like I remembered!!  I loved this product and I bet many moms out there are thrilled to have this option.  There is not much more to say, I have found that in this world you either love or hate corn dogs… if you are a lover and gluten free… this is a FANTASTIC product for you.  If you cant find them talk to your grocer and see if they can order it for you cause it is worth the hassle!!  YUMMMMMMMMY

NOW…. if only Foster Farms will  take the example from the good folks at Udi’s and incorporate their foods into the mainstream market and maybe contact the folks at Disney and other theme parks, or even fast food chains and get them served there in a safe environment… now that would be perfect!!

Gluten Free does give us limits.  But today I am encouraging you to not be limited by your imagination and to play with your food.  You might be surprised what you come up with.

Prior to being gluten free, I used to love Taco Bell’s Mexican pizzas (okay, I admit it now, but it was one of my secret guilty pleasure back in the day and something that I don’t enjoy admitting to you today) .  Obviously, that is no longer an option.  However, one day I was staring into the refrigerator wondering what in the world was I going to eat and I saw that I had leftovers from the night before… Taco night.  Taco night is always a hit in this house and we not only frequently indulge in taco night.. but we frequently have leftovers.

Typically, I turn those leftovers into a taco salad.  However, this particular day I was feeling a little more naughty than a salad and decided to play around with the leftovers I had.  I ultimately took some left over beans, meat, some gluten free enchilada sauce I had in the freezer, cheese, and a few other toppings and along with some fried up Mission Gluten Free Flour tortillas I made my own Mexican pizzas.  It was sinfully fantastic!!

This worked out perfect, because I didn’t have enough leftovers for more tacos but I sure put those gluten free tortillas and leftovers to work for me and came up with tasty lunch and I didn’t even have to run to the border for it!!

So occasionally play with your foods and don’t limit yourself to a recipe… just have fun!!
