Now I admit, ever since getting my Vitamix I have been a little crazy about seeing what it can do. It truly has been a fun experience and I am amazed at not only what it does, how well it does it, but how much money I have saved… especially when it comes to smoothies and coffee drinks.
As many people know, I am a soup fanatic. I love soup year round, regardless of the temperature outside, even the top temperatures during the Arizona summer will not stop my soup cravings!!
Now that I can whip up a batch in my Vitamix, my soup addiction might get more intense. However, please note that it is NOT required to have a Vitamix to make this recipe… I am sure that your immersion blender will be just fine one you cook it on the stove. Or if you want to do it in a traditional blender after cooking it on the stove that will work as well, just remember you will will want to chop your ingredients, which you do not have to do using a Vitamix, and with a traditional blender you will want to cook your soup before adding it for safety reasons with the reaction from the heat.
One thing I love about this recipe is that we had a pot roast one night…. I threw in two extra potatoes into the roast and saved them to make this soup a couple of days later. That way I didn’t have to bake the potatoes the day I made the soup and it made it so that with the Vitamix I had this soup done in less than 15 minutes between prep and cooking. Keep in mind if you are doing this stovetop you will need to simmer longer.
Why am I such a NERD that I just get so giddy with saving money and making leftovers into something new and fun!!
By the way… when it comes to the cooked bacon… when I am in the kitchen If a recipe calls for 4 pieces of bacon, I cook 8… simply because I can not control my “taste testing” and must end up enjoying a few pieces. Also if you want to serve soup and sandwich for dinner one night this soup goes great with BLTs!! So cook up some extra bacon and enjoy!!
