Now I admit, ever since getting my Vitamix I have been a little crazy about seeing what it can do.  It truly has been a fun experience and I am amazed at not only what it does, how well it does it, but how much money I have saved… especially when it comes to smoothies and coffee drinks.

As many people know, I am a soup fanatic.  I love soup year round, regardless of the temperature outside, even the top temperatures during the Arizona summer will not stop my soup cravings!!

Now that I can whip up a batch in my Vitamix, my soup addiction might get more intense.  However, please note that it is NOT required to have a Vitamix to make this recipe… I am sure that your immersion blender will be just fine one you cook it on the stove.  Or if you want to do it in a traditional blender after cooking it on the stove that will work as well, just remember you will will want to chop your ingredients, which you do not have to do using a Vitamix, and with a traditional blender you will want to cook your soup before adding it for safety reasons with the reaction from the heat.

One thing I love about this recipe is that we had a pot roast one night…. I threw in two extra potatoes into the roast and saved them to make this soup a couple of days later.  That way I didn’t have to bake the potatoes the day I made the soup and it made it so that with the Vitamix I had this soup done in less than 15 minutes between prep and cooking.  Keep in mind if you are doing this stovetop you will need to simmer longer.

Why am I such a NERD that I just get so giddy with saving money and making leftovers into something new and fun!!

By the way… when it comes to the cooked bacon… when I am in the kitchen If a recipe calls for 4 pieces of bacon, I cook 8… simply because I can not control my “taste testing” and must end up enjoying a few pieces.  Also if you want to serve soup and sandwich for dinner one night this soup goes great with BLTs!!  So cook up some extra bacon and enjoy!!

Chicken is a big deal in our world.  In the U.S. as red meat consumption has steadily gone down, chicken is increasing every year.   When I was a kid we occasionally ate fried chicken but we were a beef and pork home.  Now days, there are many kids who only eat chicken and that is in the form of nuggets.  So doing product reviews on chicken nuggets and chicken strips are a big deal and I tend to buy every brand I see so that you know what your gluten free options are.

If you visit this site occasionally, you will know that I am a home cook turned blogger.  I adore spending time in my kitchen.  However, I realized that not everybody does and some people may enjoy it but with crazy work and family schedules, may not have the luxury of doing so.   I prefer making my chicken nuggets but yet even I have my moments when I would like to pull something out of the freeze and bake up.

Today I had Golden Platter’s All Natural Gluten Free Chicken Tenders.  Out of all the nuggets and trip reviews this chicken test taster has done. this is not my favorite.  BUT it is also not my least favorite.  First pro is that they were easily purchased at Walmart… convenience is a nice thing to offer busy consumers.  Second, it was easy to bake up in just a short amount of time with quick and easy instructions.  Third the breading was crispy, which many products can not claim.  Fourth, Golden Platter is a family owned business, and I think it’s important to support that kind of company.  Fifth, and my favorite one, these are 100% natural, gluten free, produced without the use of artificial ingredients, hormones or preservatives.    Some of the cons of this product, I must admit, and snobby as it may sound to some people, I am not a fan of my chicken being “Breaded tender shaped patties,” but to be honest that wouldn’t prevent me from purchasing or consuming a good product, it’s just not my preference.  The only other con I felt that this product had was the fact that they were a little on the bland side.  HOWEVER… remember that kids, as well as many adults, tend to prefer their foods not overly spiced up, so this con cold actually be a pro to many people, especially with kids.  So you can see the pros definitely outweigh the cons on this product.

Would I purchase it again?? Yes I would

Do I think you should try it??  Yes, I do.

This morning I wanted to treat hubby to a special treat.  He has been so good about letting me try out new whole juices and protein shake recipes on him.  Some have been hits and some misses.  He is wonderfully patient with me!!

Todays special recipe I was told about from a friend of mine who likes to start his day off with a protein shake.  This one has a familiar flavor that give you the comfort food taste but the filling and nutritiousness of the protein shake.    Whhttp://www.connectglutenfree.com/blog/wp-admin/post.php?post=2810&action=edit#o doesn’t like cinnamon rolls in the morning… Well I was a bit surprised by the ingredients but I must admit… he is right, this is a home run in the protein shake world!!

So many people today are much more enlightened about healthier food choices.  At one time, if you had offered me something that was gluten free, vegan, raw, non-GMO, non-dairy, and kosher, I probably would have turned my nose up to it… even if you had told me it was a cookie.  I would not have been able to believe that a cookie would be worth eating without those things.  Thankfully my Celiac diagnosis has helped me be more opened minded to trying new healthier options.

I tried their Almond Butter Crunch… WOW!! They taste yummy good, surprisingly filling for a “cookie.” Sweet but not overly so, soft and chew and the nutty goodness it tasted in every single bit.  Don’t be surprised when your sweet tooth is cured with just one maybe two of these awesome cookies!!

These would be perfect to slip in your purse for a road trip snack, hiking snacks, heck, I would take these to dinner with me and have these as everybody else was eating their gluten filled desserts and I could savor my Chunkie Dunkies!!

It’s awesome to know that there are healthy & tasty options for us whether you are Gluten free, Vegan, Dairy Free, or Raw.

Now don’t get me wrong… I still have my sinful sweet tooth and I love me some serious comfort foods, but just don’t let the fact that theirs tasty cookies are actually good for you stop you from trying them… you will be so glad you did!!
