I have met several people who tell me they have never had lemon curd.  Shocked I asked … “You mean you have never had a lemon meringue pie?”

“Of course!!”

Well then you have had lemon curd.  It is probably the way most of us have had it.  But let me tell you, that is my least favorite way to have it… not on team meringue I guess.

Lemon curd is wonderful to have with scones, on toast, on your yogurt, on cheesecake, spread on cookies but you really need to try it on pancakes, wow!!  But I promise you, I can not make it without just eating a few giant spoonfuls!!  Now of course, Handsome Hubby didn’t know that so I guess the cat’s out of the bag so to speak on that one… but it’s such a sweet yet tart silly delight when you eat it straight like that, I recommend everybody does try it at least once like that.

Now days, you can purchase lemon curd, but make sure you read labels because some recipes do use flour, and some use cornstarch and I have no idea what they use in commercial production of it.  Personally I enjoy making it so much I would have to be in a serious time crunch to buy it.

BOY OH BOY!!  When Kellogg discontinued their gluten free Rice Krispies I was crazy upset!!  I mean crazy upset.  I went online immediately and left them a nasty comment on their website.  THEN I called Kellogg and placed a call into their offices to tell them how upset I was.

Now as anybody who ever worked in any form of customer service knows, crazy people calling while upset are no fun and can come off as insane.  But I was really upset and I couldn’t believe that they had made that decision.  So after giving the customer service rep a heads up that I am an upset caller and that anything I say during out call has absolutely nothing to do with him or his performance and that he should not take anything personal… then I went crazy telling the good folks at Kellogg that they have dropped the ball; that they are deserting the Gluten Free community; that they are being inconsiderate.  However, the biggest most horrendous thing that I ranted about that afternoon was that generations of GF kids will never know what it is like to have a Rice Krispie treat!!  I loved Rice Krispie treats and when I went gluten free I was crushed not to have them anymore.

Well Kellogg… SUCKS TO BE YOU!!

I am so excited about this but no matter how much excitement there is over a company offering a gluten free product it still has to be good.  Eagerly I tried it… as a breakfast cereal and it was incredible… actually BETTER than the Kellogg offering that was discontinued.  It had a much better texture and taste!!  Now that was not something I was expecting so I was so thrilled upon the first bite!!  Then I made some marshmallow treats with them and they were OUTSTANDING!

I was driving home the other day and I realized I had a craving.  With it being such a cold winter here in Arizona this year we have been having a LOT of comfort types of food.  However, I was craving something a little lighter.

I knew that in our fridge and freezer I had the makings of a salad with roasted chicken on it.  But what I was craving was a BBQ chicken salad.  The only problem is that I didn’t have time to make shredded BBQ chicken…. okay… you are right I had the time I just didn’t have the desire.

I grabbed my lettuce,  tomato, red bell pepper, green bell pepper, carrots, corn, kidney beans sunflower seeds, shredded cheddar cheese, and chopped roasted chicken…  Then topped it all off with this easy and yummy salad dressing.

So I guess it’s as they say… necessity is the father of invention… so this quick and easy “recipe” was created because I wanted that creamy ranch along with the spicy and tang of BBQ.  and it delivered making dinner easy!!

I am one lucky woman… I am married to a meatloaf eater!!

Somewhere along the line, meatloaf got a bad wrap.  It became the brunt of many of jokes and cliches.  It’s amazing to me that so many people do not and will not eat meatloaf.  Personally, I love it.  As I have mentioned before, I never ate it till I was in my mid-twenties.  Growing up in a hispanic household I ate my weight in beans and tortillas and yet never once ate meatloaf.  Maybe because my folks didn’t like it as kids, I will never know.  I can tell you that once I got over my fear of the joked about meatloaf and tried it in my mid twenties I was hooked.

Both Handsome Hubby and I have been craving it.  I made it for dinner last night and although it was just the two of us, we gobbled it up.  I guess it’s been too long since we have had it cause it was like welcoming a good friend home.. and then of course eating the friend for dinner.  But that sounds rather cannibalistic and of course we are not that… But you get the point.

One of the beautiful things about meatloaf is that there are many different recipes out there.  So many good ones to try.  I admit, once I find a recipe I like to stick with it.  For example for the last decade or so I have been making my “famous” meatloaf recipe (and when I say famous, I mean within my family and circle of friends).  Click HERE for my usual recipe.  However, I wanted to bring out a oldie but goodie and make it gluten free.  This is a recipe that I used to make decades go…  I hope you enjoy it as much as we did last night!!

Over the holidays I tend to collect a lot of recipes from friends and family.  The recipes that were made for dinners and potlucks that are not gluten free but that Handsome Hubby said were good so I worked to make them gluten free.

Today’s decadent delight came from our niece A.M.  She made this amazing looking dessert and one look at hubby’s face, after his first bite, and I knew I just had to get the recipe to convert it for my gluten free friends.

Oh boy I am glad I did.  But I am also glad I made these in individual cupcake papers instead of making one large serving dish…. that way I could share them, although making in it one large serving dish would make the preparing of this recipe a lot easier…  but sharing is good and I encourage you to do so.  However, I must be honest, it’s not that I am oh so generous or anything, because that is NOT the case… I am glad I could share them because they were so amazingly awesome I would have eaten them all… Every single one of them!!  Yes, they are THAT good.  Anybody who likes a creamy chocolatey dessert will like these and trust me they are going to be a huge hit once you make them.
