Recently we made fish for dinner and my Handsome Hubby wanted to have tartar sauce with it.  Sure no problem, I tell him…. However there was a problem.  It was just a few minutes prior to dinner and I realized we didn’t have horseradish sauce.

AWWWWWWWW!!!!

Panic hit me because the last thing I wanted to do was to keep my hot dinner warm while I went to the store and bought it.  After all, in tartar sauce and cocktail sauce seems to be the only ways we use horseradish.  The jar in my fridge expired over three months ago and it was BARELY used!!  What a waste.   I am sure there is at least a handful of people reading this post who have expired tartar sauce in their fridge… maybe this recipe will save you as well one day!!

So I thought about it for a few minutes and I came up with this recipe.  It was actually a LOT better than I had thought it would be and dinner went off without a hitch.  Hot and Fresh dinner on the table and the tartar sauce was cool and zippy!!

I always get excited when I see new gluten free products available at my local grocers that I have not seen before..  not only because I get to share my find with you but in the “big picture” that means more companies are out there and smaller companies are being sought out by the grocers… all of which is good news in the gluten free community!!

I got a huge smile on my face when I saw a gluten free cake mix from Full Circle.  They specialize in natural products and I was not aware they were doing gluten free now.. very cool.  And it was a spice cake mix which is a nice change from the normal yellow or chocolates out on the gluten free market.  Plus the back of the package gave easy and fun recipes to make your spice mix into either carrot cake or apple spice cake.  VERY cool!!

I made our mix into the Apple Spice Cupcakes.  I used store bought frosting to frost them but lets face it, my focus was to taste the cake.

It was good.  We enjoyed it.  It was a little spongy for me but Handsome Hubby disagreed with me and really enjoyed them.

I am also eager to try some of Full Circle’s other gluten free items but for now this is the only one being offered at my local store.  Would I purchase it again… yes… I am eager to try their carrot Cake recipe!!  Based on the added ingredients it looks a lot like the carrot cake I used to make prior to being gluten free and I am looking forward to having a quicker gluten free option with a cake mix base.

Have you ever found a “new” gluten free product you just can’t get enough of?  Well, Three Baker’s Gluten Free Breads have been that to me.  I have been talking about it and telling about how this is a bread that you do not HAVE to toast to enjoy… of course toasting it tastes great but I can not tell you how many slices I have just eaten buttered and straight!  That is pretty unusual for gluten free breads.

So I was standing at the kitchen counter with my butter and butterknife in hand just not able to stop myself from having a lunch of buttered bread and I noticed something pretty exciting…

DIETARY FIBER!!

I saw that one slice had 6 grams of fiber.  That seemed pretty high to me so I went and took a peak of Handsome Hubby’s plain gluten filled bread in the pantry….  it had LESS than 1.  Not even enough for them to number!!  WOW!!  To celebrated I had another slice.

Of course I probably shouldn’t make meals of nothing but bread and butter BUT if you are ever going to do it, this is the bread to do it with.  I got to say I just love love love this bread.  I will also admit, that I grew up on gluten filled white bread so I never dreamed that I would love a whole grain product as much as I do.

I have found that my local Safeway carries this bread in their freezer section.  This is also a reason was wrongly afraid of this product.   I have not always had the best experiences with frozen bread… however, this product defrosts beautifully!!

This last couple of weeks I have been on a sandwich kick, thanks to Three Baker’s.  I have never craved a gluten free bread like I do with their breads.  I hope you try them soon!!  Drop me an email and let me know what you think!!

I know that I have been eating a lot of soups, chili and comfort foods.  This time of the year, especially in an extra cold winter, just seems perfect.  As I am sitting here writing this blog posting I am wrapped in layers and layers of warm clothes, under a blanket, in front of a portable heater while drinking hot coffee.  I am cold!!  However the cold weather here in the Southwest is still nothing compared to the snowy weather of other states.  Which is why having bbq ribs for dinner, which many people associate with the summer, is a year round meal for those of us in the comparatively warmer states.

I am a woman who loves to eat ribs … it’s one of my favorite meals and I am grateful that Handsome Hubby encourages me to make them frequently to help with those cravings.  So last night we made some yummy ribs, coleslaw, and baked beans.  I literally could eat this meal several times a month and it never gets old.

One thing I do not know how to explain is my obsession with coleslaw.  I rarely make it the same way twice.  I can’t understand why I enjoy “mixing it up” with the slaw.  Adding this or that to it… I have had some major hits and major misses.  Today’s recipe is definitely a hit.  I just adored the flavors of this slaw!!  Not to mention, it was crazy easy to make.

I am already looking forward to the leftovers!!

I really enjoy when my friends come over to do a pot luck.  Although most of my friends are not gluten free they are wonderful about bringing foods that I can enjoy with them and many times will just bring the the recipe so that I can have no worries about ingredients .  I do provide many of the dishes and sides so that if they don’t feel obligated into making something gluten free.  Ok Ok, I will admit it.  I do this so that they don’t have the hassle of making gluten free but mainly so that they will bring wine cause they won’t know what else to bring… when the party is over I send them all home with loads of gluten free leftovers and I get a ton of bottles of wine!!  SCORE!!

Okay now that my dirty little secret it out, I have a great recipe to share today… this is a great, naturally gluten free, bean salad recipe.  In fact, a friend of mine brought this to a backyard BBQ we had a few years back and brought me the recipe so that I could look it over to know it was safe for me to eat…. What a sweetheart,  Anyway…. when it comes to this recipe… talk about easy!!  Plus its BETTER if you make it a day in advanced, so it doesn’t get any better than that when it comes to making  BBQ sides.  It travels well so if the BBQ  or potluck is not at your home, just toss it in your plastic food storage containers and you are off and ready to go.
