Okay… I have been hearing about cloud bread Oopsie bread for ages… via the Internet, especially Facebook.
I have heard it called both Cloud bread / Oopsie bread
It’s both Paleo friendly and Gluten Free. No flour and almost all egg.. also means high protein!! Continue on with thoughts around no carb, low carb,look at the keywords for inspiration.
It has been on my “to do” list for awhile and I finally got it made!!
I found that there are two types… one made with cream cheese and one made with sour cream.
So today we are talking about the one I made first, simply because I had sour cream in the house and I did not have any cream cheese. However, I will be reporting both to you, the cream cheese version in a future posting.
I was eager to make it and I will not deny… while making it my excitement grew.
However, I must be forthcoming and tell you once I pulled them out of the oven, they looked so beautiful yet delicate, I was pretty much convinced the hype was just that… hype.
Don’t get me wrong… I thought they looked beautiful I just didn’t know how they would stand up to a burger or even a sandwich…
Thanks to Handsome Hubby and his adventurous spirit, he was the first person who tried them. I made him a sandwich on it…. nervous while the “jury was out”… after the first bite he declared it was a winner. He thought it was GREAT!!
WHAT? It didn’t fall apart? It was tasty as well? He was sold right from the first couple of bites.
WOW!! Now I was excited!!
I started to use it in multiple meals and snacks.
Please note that the leftovers store well. The next day I was worried because they felt soft and squishy… Do not panic like I did!! In fact, I popped them into the toaster oven for a minute or two and they were once again perfect!!
I am going to be posting about the cream cheese version very soon… I will let you know which is better. I am confident you are going to enjoy this version!!
