Okay… I have been hearing about cloud bread Oopsie bread for ages… via the Internet, especially Facebook.

I have heard it called both Cloud bread /  Oopsie bread

It’s both Paleo friendly and Gluten Free.  No flour and almost all egg.. also means high protein!!  Continue on with thoughts around no carb, low carb,look at the keywords for inspiration.

It has been on my “to do” list for awhile and I finally got it made!!

I found that there are two types… one made with cream cheese and one made with sour cream.

So today we are talking about the one I made first, simply because I had sour cream in the house and I did not have any cream cheese.  However, I will be reporting both to you, the cream cheese version in a future posting.

I was eager to make it and I will not deny… while making it my excitement grew.

However, I must be forthcoming and tell you once I pulled them out of the oven, they looked so beautiful yet delicate, I was pretty much convinced the hype was just that… hype.

Don’t get me wrong… I thought they looked beautiful I just didn’t know how they would stand up to a burger or even a sandwich…

Thanks to Handsome Hubby and his adventurous spirit, he was the first person who tried them.  I made him a sandwich on it…. nervous while the “jury was out”… after the first bite he declared it was a winner.  He thought it was GREAT!!

WHAT?  It didn’t fall apart?  It was tasty as well?  He was sold right from the first couple of bites.

WOW!!  Now I was excited!!

I started to use it in multiple meals and snacks.

Please note that the leftovers store well.  The next day I was worried because they felt soft and squishy… Do not panic like I did!!  In fact, I popped them into the toaster oven for a minute or two and they were once again perfect!!

I am going to be posting about the cream cheese version very soon… I will let you know which is better.  I am confident you are going to enjoy this version!!

Pan Fried Butter Beans Recipe (Naturally Gluten Free)

Growing up in an hispanic home, I had refried beans so often I couldn’t even begin to count.   My family also loved baked beans.

However if it wasn’t baked beans or refried beans we NEVER ate it.  NEVER EVER EVER!!

Not even in chili.

When I was in my mid to late 20s I was exposed to other beans.  Convinced I was going to hate them I learned quickly how AWESOME beans are.  I love them now… and I never pass up the opportunity to eat them.

I am sure you are aware that beans are legumes

Although beans are a good way to get nutrients like iron and zinc, they are so high in protein that they are actually considered part of the protein food group with meats like beef chicken and pork.

BUT WAIT THERES MORE!!!

Did you know that they are also part of the vegetable group as well??  They are such an excellent source of dietary fiber and other nutrients similar to veggies like folate and potassium.

However, the bad side is that they are high in carbs so that has to be taken into consideration if you are looking to lose weight or in managing blood sugars.

Well, I will get off of my bean soap box…. for now and tell you about today’s recipe.  I found a couple cans of butter beans, aka Llima Beans, in my pantry and thought that was just the side dish I wanted with dinner.  Well, I did a quick Google search and found this recipe (Original recipe)

Well, I didn’t have the rosemary that the recipe called for and I didn’t feel like pealing some garlic cloves, so I had to make a few changes.

But it was a great side dish and I will definitely be making this again soon!!

I don’t know what’s going on but for some crazy reason I have been craving chicken nuggets more over the past year that I have EVER in my life!!  Let me be more specific I have been craving home made chicken nuggets more than ever.  That is a good thing because it’s not like there is a large market of restaurants or fast food options for the gluten free chicken nugget craving community.

Well, when you are making chicken nuggets you always must consider what to serve as a dipping sauce.  Oh sure … you can never go wrong with gluten free ranch or gluten free BBQ sauce… but sometimes you just want something new and different..

Well today’s recipe is just the way to mix things up a bit at your dinner table.  This is kid and parent friendly for sure… Gluten free Cranberry Sweet and Sour Dipping Sauce!!  Now I got to let you know… Handsome Hubby likes to spice his up… and I do not.  So he just mixes in a little hot sauce and I keep my sweet and tangy….  it’s a win / win for both of us!!

I will definitely be serving this again on our next nugget night!!

My friend, the fabulous Mrs. L was over recently.  She and I were chatting and she wanted to grab another bottle of water out of the fridge and she happened to notice I had an pickle-less pickle jar in the fridge.  She just had to ask what was up with that…

I explained that Handsome Hubby likes to drink pickle juice.  She chuckled and explained that would never happen around her house… she is more likely to run out of the pickle juice before the pickles are gone… which of course got my curiosity up….  she explains that she likes to cook with the juice… okay… now I am intrigued.  She explained to me that she uses it in her chicken nugget marinade.  WHAT?  really??

Well I made a mental note to hide the pickle juice from hubby so that the next time I made chicken nuggets I would give it a try.

Unfortunately, when I went to make the nuggets I couldn’t get ahold of Mrs. L. to confirm what I believe she said was simply a half/haft ratio of pickle juice and milk for the marinade.  I figured that was a good starting place.  Turns out to be a good starting point cause that is exactly what I needed.

Well, when she gets back I can’t wait to tell her I loved her marinade!   I can’t say I tasted the pickle juice but they were tasty and  they were “different” than what I have made in the past.  I am definitely going to make these again!!

The coleslaw maniac that I am was experimenting again!!

Handsome Hubby is so kind and patient with me… Nobody knows what I will do to the coleslaw next.  I have no explanation of why I am always messing with the coleslaw.  It’s not like I am trying to find a better recipe… I love them all.

Today I noticed that I had a jar of pickle juice in the fridge… I save the pickles jars because Handsome Hubby loves to drink the juice from time to time after the pickles are gone.  Well, now thanks to this yummy recipe… I am going to have to start hiding the pickle juice so that I can cook with it instead.

Now don’t get me wrong… this doesn’t overwhelm you with the pickle flavor.. in fact, most people will not even notice it… but it just gives it a nice familiar flavor.

Now, do not ask me about making this with sweet pickle juice because I can assure you I will not have an answer for you… unlike Handsome Hubby, I despise sweet pickles.  In my mind, they are just plain evil.

With summer coming I am sure I will be making this recipe again… well that is if I can control my desire to make new coleslaws every time I make it…

Does anybody else do this??  What do you always “tweak” or experiment with??  I would love to know that I am not the only person who does this.
