Coconut Mama’s Coconut Flour Pie Mini Tart Crust Recipe
Over a year ago I purchased some mini tart pans from Amazon. They were wonderful!! They have removable bottoms and so tarts come out of the pan without having to serve the tarts in the pans… I was so excited when they were delivered…
and then… I forgot about them.
I found them the other day and realized I had never used them once and I was eager to use them.
I also found a bag of coconut flour I had purchased a few months ago and never used… so I figure this was the time to use BOTH of them.

I found this tasty pie crust. I have not used it yet as a pie crust… just in these mini tarts. However, I am sure that it’s just a matter of time because it was so tasty and so easy I will be using this again soon.
I haven’t had a hushpuppy in years…. YEARS!! I do not exactly crave them because I remember them being hard balls of dough that were deep fried. Of course, anything deep fried is wonderful but it wasn’t till I was searching for my pantry trying to find something to make as a side dish that it crossed my mind to give it a shot.
I have been working on a gluten free hushpuppy for a few months now… trying to get them tasty enough to post. This was especially important to me because i didn’t want to deliver the kind of hushpuppy that I was served… that fried ball of hard dough… no thanks. Well I finally have it. a combination of fluffy, flavorful, deep-fried goodness… not anything resembling the dry hard fried ball of gluten.
I think you are going to like these… are hushpuppies everyday foods? heck no… but they are pretty dang tasty on special occasions!!
Gluten Free & Reduced Carbs Cinnamon French Toast Recipe
I have really been enjoying exploring the world of gluten free AND low carb. One delight I have found is this tasty reduced carb french toast… after all… how can you not be happy when eating French toast? Especially when you eat it with some crispy bacon!! Of course that is just my personal opinion but I think bacon is one of the few things that can be added to many things and it becomes even better.

It’s crazy hot here in Arizona right now. I don’t know why but the older I get the harder the summers feel. For the first time in my life I am dreaming of being a “snowbird” For those non-Arizona readers a snowbird is a person who lives in Arizona in the winter when it’s beautiful and then runs away to cooler weather spots in the summer. I keep telling Handsome Hubby that I want to hop into our RV motorhome and get away from this 110+ degree weather!!
Well, when it gets hot like this I want a fast and easy dessert that is nice, cool and refreshing.

Gluten Free Product Review – Litehouse Coleslaw Dressing and Dip
I am such a fan of coleslaw it is not just a summer side dish for me… I love it year round. If you are a regular reader to this blog you know that I am constantly posting recipes for different coleslaw recipes.
Well I had a craving for coleslaw but I just didn’t have it in me to make another blend of slaw dressing. Then I just happened to notice that in the produce section at my local grocer was a bottle of Litehouse Coleslaw Dressing and Dip… Well I was eager to give it a try.
Well as much as I enjoy making slaw dressing from scratch, it was nice to have the option of using a remade dressing!! I enjoyed it… tasted great and I would totally buy this again!!
