Gluten Free Product Review – Jovy Fruit Rolls
When I was a little kid getting fruit roll ups were a special treat!! I remember back in those days they would go on sale occasionally for 10 or 12 for a buck!! Talk about a good deal. Now days they are considerably more expensive than that.
Thankfully after inspecting the Jovy Roll package I learned that they were gluten free and I was just so thrilled!! However, when I see them it is so hard for me to not to buy them. It brings back such wonderful memories!! As when I was a kid, the apricot and grape are my favorites.
Other great flavors are available like strawberry, mango, apple, watermelon, strawberry kiwi, raspberry, pineapple and cherry. Although not all of those flavors were available at my local grocer, I am eager to try them.
These are great for packing into a lunch or a quick snack. Now of course I also suggest you try making your own fruit leather / rolls….. If you ever want to give it a shot, try this yummy recipe… HERE. However, if you don’t have the time or desire to make your own then give these a try. I am not just saying that because they were my favorite childhood treat… Okay, maybe I am… guess we will never now.

Easy Cucumber and Tomato Salads – Naturally Gluten Free
I am always trying to find healthy and nutritious lunches for Handsome Hubby!!
One that is always a hit is this easy Cucumber and Tomato Salad. But don’t just consider it lunch… this is a tasty and easy dinner. We have also served smaller versions as a side dish as well!!
Also… keep in mind you can have some fun with this recipe as well. Recently we were on a trip and stopped into the most wonderful olive oil and balsamic store. They had so many flavors and options; it was mind blowing!! So you can change up this very simple recipe simply by using different flavored oils or vinegars!! In fact, I have made this using a strawberry balsamic and it was delectable!!

Gluten Free Creamy Chicken and Mushrooms Recipe
I have been having some emotional days lately. One of my favorite things to do when I am feeling a bit blue is to make creamy comfort food that many times includes mashed potatoes!!
I am not sure why mashed potatoes are such a comfort to me but they always make me happy. When I was a kid I went to my bestest childhood friend May who was the most wonderful friend a girl could have. I was crazy shy and sheltered back then. She was incredibly smart and fun. We have known each other since we were 7…. many many many years ago. (okay, so there are probably a few more “many” in there… but you get the idea)
Well recently May and I were chatting about childhood memories and it came up that we rarely ate dinner at each others house. She reminded me of one time that I did go to her family’s house. She said I was upset because her mother was making mashed potatoes out of actual potatoes. Growing up we ONLY had mashed potatoes from a box… at that time I had NO idea that people actually made them from fresh potatoes!! Crazy isn’t it!! But it’s totally true.
Now that I have grown up and learned the magic – that is in a bite of creamy mashed potatoes – I have always found them extra comforting. Tonight I wanted to have some of that comfort that those squished taters will bring. However, I always want something WITH them, not JUST the potatoes. Tonight I thought I would take advantage of the fresh mushrooms I had in the fridge… I always have chicken in the freezer so this just kind of came together.
Quick but important note: If you want to use this recipe using up some leftover chicken you have this is a great recipe for using leftover rotisserie chicken or leftover baked chicken. Just skip the first couple of steps where you cook the chicken and add it towards the end when you are adding the peas. It will just take longer to get the sauce up to heat through.
Gluten Free Lemon Mousse Recipe
Lemons are one of the most wonder fruits ever!! Love them so much!!
I have to say… buying lemon curd is something that I have not done… but I must admit, it is more and more appealing all the time…. home made lemon curd is wonderful. There is no doubt about that. But it truly is a labor of love!! I also find it amazing that you can take a few simple ingredients and turn it into one of the most wonderful culinary delights ever… However, once again, it’s a labor of love. The results are out of this world!!
I would recommend making your lemon curd a day or two before you make this outstanding lemon mousse. Oh sure, you can do it all in one day… just a recommendation. This dessert is very, very rich. In fact, I think you could actually cut down the serving size and make more smaller ones. Ohhhh, this would be just perfect for those mini desserts that are so fashionable. Check the Amazon links below for some of those mini glasses!!
I would also recommend using a piping bag. Now, I do not have the fancy ones, although I sure would like some, I use a Ziploc bag. I take a large gallon size Ziploc and I fill it up then cut the bottom corner off and use that. Although a large piping bag would probably be even better!!
I tend to make desserts that are more in the comfort food arena, but everybody needs a fancy one to impress in their repertoire !! Anything with lemon I just adore… but this was one fancy dessert that I enjoyed immensely and I hope you do as well.

Lemon Creme Brûlée – Naturally Gluten Free
I am on a lemon kick…. again. This seems to happens annually… oh who am I trying to fool.. it’s more like semiannually. Okay, more like anytime I see a good price on lemons!!
I do not know what my obsession for this beautiful citrus fruit is about. I know it must have started before I stole lemons off of a neighbors tree on the way home from school. I admit this only because I believe the statue of limitations has run out on this crime, but I can see why I would find lemons with risking a possible life of crime…. not only can they can be used in savory and sweet recipes, but they can also be used in making many more things from alcohol beverages to cleaning supplies!!
A friend of mine and I were chatting about our favorite desserts and I mentioned creme brûlée. The rich and silky decadence has got to be one of my favorites. This led our conversation to the fact that she and I have only had vanilla bean creme brûlée but have seen only a couple of flavors overall.
Later that day, while at home, I realized I am still on a lemon kick and wanted something “lemony” and yet couldn’t get that creme brûlée conversation out of my head and thought… Why not combine it….
So I gave it a try and this is what I came up with… Hope you enjoyed it as much as I did!!
