Whenever I see ribs on sale it’s all I can do not to load my freezer up on them. I know that for most people ribs are a summer treat. However, for me it is a year round culinary delight!!
The one “problem” with ribs is that when it is just Handsome Husband and me for dinner, we always end up with leftover ribs. I also know so many people who have had a backyard bbq and they over planned the food and had leftover ribs. Worry not… Just toss those ribs into the freezer and in a few weeks or months when you are craving the bbq craving… you can have it again, but with a twist!!
Well today I am going to share with you a yummy idea to do with leftover ribs…. making them into a mashed potato bowl!! I served mine with cooked carrots, but trust me… any veggie you like will be great. The funny thing is… the inspiration for this dinner was something I saw served at a county fair. They served theirs to look like an ice cream sundae, but it was a meat sundae.
I am always trying not to waste delicious leftovers and this is a new and exciting way to make sure one of my favorites is utilized to its fullest potential!!

Even before I was gluten free, cake donuts were always my favorite!! But I never had a strawberry one till I started making these. About the only thing that could make these even better is if you finely chopped up a little bit of fresh strawberries to put in the batter. But remember not a lot because the moisture in the strawberries could affect your batter.

Well, I never denied being rather strange… But today I gotta share a new find for me. I know this product has been out on the market for awhile but really… I just never got around to trying it.
Well if there is anybody else like myself who “keeps meaning to get around to it” when it comes to Van’s Gluten Free BBQ Multi Grain Chips… GET TO IT!!
I just adored this product. I ate the whole bag in one day. Now I am not saying that as in something I am proud of… just stating the facts.
I will admit that Handsome Hubby did not care for them. We have not been able to figure out if it is because he is not required to be gluten free and occasionally gets “regular” BBQ chips, or if it was simply cause it just wasn’t something he enjoyed. But I am going to let you in on a little secret… I was THRILLED he didn’t like them and then proceeded to eat my way through the bag. Okay… so maybe it would have been better for me had he liked them but sometimes it is just awesome to have a little snack just to yourself that your spouse does not enjoy… He likes these strange peach gummy things that I can not stomach… we I will let him have those while I eat more of these!!
I think I might be melting… no I am not melting something in the kitchen… I, personally, feel like I am melting.
This heat is getting to me. All I want to do is sit in front of the fan in my bathing suit with a giant cold ice water to drink and just not move. Oh sure, all of us in Arizona knows this is to be expected. However, when it gets like this it becomes hard to be motivated to cook. I know that I am always trying to find easy no bake recipes for all of our meals and even dessert.
My lemon loving friend Harley gave me this recipe recently. I thought this would be the perfect dessert to make so that I wouldn’t have to heat up my house with the oven or stove.
This is a crazy rich decadent dessert and it’s really nice and chilled. I was sold at the “no bake” part!! Harley is a superstar in the kitchen and I gotta say… this is one her many yummy recipes.
