Gluten Free Tuna Cakes with Creamy Dill Sauce Recipe
Handsome Hubby has to travel internationally for work several times a year. When he is gone I spend a lot of time in the kitchen. It really helps to make time go by faster until he is home. It is also a fantastic time to get the kinks worked out of recipes and even try recipes I have seen on the Internet without having to worry about hubby’s dinner being ruined if it doesn’t come out.
That is exactly what happened during his last trip… I thought I would try a vegetarian meatloaf. Now anybody who reads this blog knows, I am about as far from a vegetarian as it gets. However, I liked the idea of trying a new recipe for this “meat-less” Monday phenomenon I am seeing all over the Internet. This particular day I learned a valuable lesson… always have gluten free cereal in your pantry. I worked on this meatloaf and when it came out of the oven it smelled great! But… after trying to “cut” it, and I use that term loosely, I knew I was going to need a dinner alternative. So Pebbles cereal it was!!
Everybody has kitchen disasters and I am grateful that this particular one was unwitnessed by anybody but me and the pets.
The next day I started to work on this Gluten Free Tuna Cakes recipe and now I finally think it’s ready to share!! Easy Cucumber and Tomato Salads – Naturally Gluten Free
I am always trying to find healthy and nutritious lunches for Handsome Hubby!!
One that is always a hit is this easy Cucumber and Tomato Salad. But don’t just consider it lunch… this is a tasty and easy dinner. We have also served smaller versions as a side dish as well!!
Also… keep in mind you can have some fun with this recipe as well. Recently we were on a trip and stopped into the most wonderful olive oil and balsamic store. They had so many flavors and options; it was mind blowing!! So you can change up this very simple recipe simply by using different flavored oils or vinegars!! In fact, I have made this using a strawberry balsamic and it was delectable!!

We have been planning a getaway in our RV motorhome to someplace that is cooler than here in the Metro Phoenix area. However, until then we have to take every opportunity to stay cool. Staying cool here in the heat of the summer you see a lot of people going to indoor places like movie theaters and malls… but also eating cool things like sandwiches and cold salads… and in my case we eat a lot of cool cucumber salad, a family favorite we have been making for years and years!!
This salad is tasty year round but it’s extra refreshing when the heat is overwhelming. It also makes a fantastic side dish to any backyard bbq, church social, or work potluck.
Easy and yummy…. it just doesn’t get better than that!!
I am a BBQ loving woman!! One thing I love about ordering barbecue at many different places is the fact that everybody makes their sauce a little differently. BBQ sauce is like snowflakes… there are not two alike. Let’s just all agree BBQ sauce can make or break your favorite rib joint!!
At home, I must admit, I do prefer to buy pre-made BBQ sauce. The convenience is hard to beat. But not all BBQ sauces are gluten free… so making sure the sauce you purchase is safe to eat is always a challenge!!
