I haven’t had a hushpuppy in years…. YEARS!! I do not exactly crave them because I remember them being hard balls of dough that were deep fried. Of course, anything deep fried is wonderful but it wasn’t till I was searching for my pantry trying to find something to make as a side dish that it crossed my mind to give it a shot.
I have been working on a gluten free hushpuppy for a few months now… trying to get them tasty enough to post. This was especially important to me because i didn’t want to deliver the kind of hushpuppy that I was served… that fried ball of hard dough… no thanks. Well I finally have it. a combination of fluffy, flavorful, deep-fried goodness… not anything resembling the dry hard fried ball of gluten.
I think you are going to like these… are hushpuppies everyday foods? heck no… but they are pretty dang tasty on special occasions!!
Gluten Free & Reduced Carbs Cinnamon French Toast Recipe
I have really been enjoying exploring the world of gluten free AND low carb. One delight I have found is this tasty reduced carb french toast… after all… how can you not be happy when eating French toast? Especially when you eat it with some crispy bacon!! Of course that is just my personal opinion but I think bacon is one of the few things that can be added to many things and it becomes even better.

I was trying to find a low carb cornbread recipes. I found an interesting recipe but ironically, it didn’t have corn… which I found fascinating… how do you make cornbread with no corn.
My curiosity got the better of me and I had to try it!!
Well I found that this recipe had the texture similar to cornbread but yet kinda had the flavors of those cheddar biscuits that Red Lobster Serves. So I know the original recipe calls it faux cornbread and it’s good to use instead of cornbread, but it’s got that cheddar biscuit vibe that I adore. So it’s a win win not matter which you are looking for.
We have been enjoying some low carb and gluten free foods lately. Something I do not make often is pancakes… which I always wonder why because I really enjoy them.
It might be because even prior to being gluten free I never really made them at home and always preferred to eat them out at restaurants. Well, as Celiac or gluten sensitive people know, eating out is a rare treat, eating pancakes out is almost nonexistent.

These are not going to taste like the gluten filled ones you used to get at the International House of I Hopping Pancakes. But I will tell you they have great flavor and are we are going to make them again very soon!!
