Gluten Free & Reduced Carbs Cinnamon French Toast Recipe
I have really been enjoying exploring the world of gluten free AND low carb. One delight I have found is this tasty reduced carb french toast… after all… how can you not be happy when eating French toast? Especially when you eat it with some crispy bacon!! Of course that is just my personal opinion but I think bacon is one of the few things that can be added to many things and it becomes even better.

We have been enjoying some low carb and gluten free foods lately. Something I do not make often is pancakes… which I always wonder why because I really enjoy them.
It might be because even prior to being gluten free I never really made them at home and always preferred to eat them out at restaurants. Well, as Celiac or gluten sensitive people know, eating out is a rare treat, eating pancakes out is almost nonexistent.
Well today’s recipe comes from a great low carb blog called Simple As That ( http://simpleasthatblog.com ) This is the first recipe of theirs that I have made but I enjoyed it so much I will be exploring more of their recipes for sure!!
These are not going to taste like the gluten filled ones you used to get at the International House of I Hopping Pancakes. But I will tell you they have great flavor and are we are going to make them again very soon!!
It’s been insane around here. I am sure you can relate to those kind of days that you do not know if you are coming or going. If it were not for list, I would be so jumbled up in my own brain I couldn’t function.
So I must keep it short and quick… kind of like breakfast was this morning. Thanks to my friend Carrie’s awesome recipe at least I knew we had a good start to the day….
Now only if I could be so assured that dinner tonight will be more than a slice of cheese eaten while standing with the refrigerator door open and I cram it into my mouth and hope for a less chaotic and more peaceful tomorrow!!
Gluten Free Gingerbread Pancakes with Spice “Syrup”
Christmas morning is always a special time. Some families enjoy opening gifts first followed by a special breakfast; while some do breakfast and then gifts. Nothing would get the day going in the festive spirit like some hot Gluten Free Gingerbread Pancakes with Spiced “Syrup.” It’s a new holiday tradition waiting to happen!!
However, also considered enjoying this season treat one weekend to get your holly jolly in motion before going out shopping or maybe before you decorate your tree. There are so many times to enjoy these special pancakes… as a fan of gingerbread pretty much everyday this winter will work for me!!
Now for those of you who are very busy, don’t worry I have made these in advance and then heated up the griddle just to warm them up. The “syrup” can be made in advanced as well, while heating it up in a saucepan.

So many people, including myself, enjoy something sweet in the morning. Drive by a Dunkin Donuts and one look at the drive through and the crowded parking lot will confirm that!! Despite what our taste buds tell us, these are not always the best of choices. I know Handsome Hubby does enjoy something sweet in the morning but yet I would rather him have a nutritious breakfast. The challenge comes in… how do I make him a healthy breakfast, that he enjoys, when we are both running round like crazy working crazy early hours.
Today the answer came in the form of a Gluten Free Peach Pie Protein Shake. It was delicious, nutritious and was a sweeter treat (although not compared to those maple bars he loves so much) The protein will help him get to lunch without snacking. Today we are having some healthy leftover soup that we had last night for dinner. Now don’t go and think we are on some kind of health kick or something… I made an AWESOME cake for dessert last night and I always feel less guilty about a nice piece of yummy cake when I ate a healthy meal!!
