Pumpkin Panna Cotta Recipe – Naturally Gluten Free
Years ago we were on cruise and one of the few desserts I could have was a Panna Cotta. I had never had one prior to that and I just immediately loved it. Cool, creamy and sweet… how can ya go wrong??
The only problem was that I had never actually made them. Upon our return I set out to learn how to make them… and it has defiantly become one of our favorites. I was telling my friend Maddi about our upcoming cruise and how excited we were about going. One of the fond memories I shared was the night that I ate three Panna Cottas despite the fact that my Handsome Hubby was shocked about my indulgence. She asked me what flavor and I told her vanilla bean. She said considering how much I love pumpkin stuff she asked me if I had made those yet. Well I had not even thought of it… but she got me hooked up with her family’s Pumpkin Panna Cotta recipe… She said that they like to make them instead of pumpkin pie over the holidays because it has that traditional taste and yet it has a new twist.
So I just made them and I totally agree. What a wonderful treat!!
Okay, so I bet regular readers of this blog are asking themselves… is she really putting out yet another recipe for enchiladas??

I just adore them. They are so versatile and tasty!!
You can make them pretty much with anything you have leftover in the fridge or freezer. For someone like me who thrives off of making cost effective meals these are the ideal format. I have made them with leftover meats and cheeses and BAM dinner is on the table for just a few dollars!! Need to feed a crowd in a pinch… not only would this be cost effective but I don’t know a single person who doesn’t enjoy enchiladas. You will be a beloved hostess (or host)! Enchiladas are also a great main course to take to a potluck or or church social.

Gluten Free Turkey Noodle Soup with Easy Country Noodles Recipe
I know a lot of people tend to make soup with their leftovers. However, this is the soup my Handsome Hubby looks forward to. I started to make this last year and for someone whose favorite way to have turkey leftovers is on a sandwich, for him to ask me for this soup told me immediately that I had a home run!!!

Now this is going to sound odd but I love turkey leftover recipes that I make a TON of tempting appetizers and side dishes just so people get full fast and leave my dang turkey alone.. that way I can think of something fun to do with that turkey and serve it to you the next few nights!!
Tonight I served my Handsome Husband this delightful treat!! It was a big hit at our home. In fact I took a big pot over to one of our recipe taster’s house too. This is nice cause with just three to four cups of chopped turkey you can get a pot of soup that will feed 8 to 10!!
I love turkey and it’s on sale big time right now!! I am buying them and cooking them just to freeze the cooked meat. This makes it a lot easier to store once cooked and the cooked meat makes great fast meals!! At 0.79 cents per pound how can you go wrong??
One thing that I just adore is leftover recipes. Although I have many leftover recipes on this site, right now I am focused on the gobbler. By day three reheating the leftovers is not appealing to everybody so here is a great idea of what to do with them to mix it up a bit!!
I really enjoyed this recipe but when buying the gluten free BBQ sauce you can always use your favorite but I do recommend not using the sweeter ones like the honey or brown sugar sauces… but even if you do this easy recipe sure is tasty.
Keep in mind… this leftover recipe can be made in the morning or night before and then popped into the oven at dinner time.
Your leftover turkey takes one a whole new life with this recipe!!
