Pre Celiac diagnosis I remember going out to national chain restaurants with my girlfriends and getting this HUGE salad and a nice refreshing cocktail. We would chat and catch up and munch on those ginormous salads and have such a good time.
Now days I still do it but it’s just not the same, but the cocktail and catching up are still a good time. Salad wise, I get a plain salad, and I bring my own dressing and even my own gluten free croutons (heck I have even been known to bring some toppings). We enjoy our girlfriend chats and our lunch but I must admit, as much as I like my salad I miss some of those fun salads the chain restaurants serve.
Well next time, girlfriend time is going to be at my place. Today’s recipe is a throwback to those salads I remember. I do not remember which restaurant it was at but I can remember the salad. I loved this salad so much I ended up eating wayyyyyyyyyyy to much and making myself so full I had to pass on dessert. With the size of my sweet tooth, that is saying a lot… I enjoyed every single bite and didn’t miss dessert at all!!
