I am always looking forward to Mexican food for dinner. Eating it at home, assuring it is gluten free, makes it even better. No cross contamination fears here!
Handsome Hubby’s favorite Mexican food side dish is red ride / Spanish rice so I am always looking for ways to mix it up a bit for him. He found this one is richer than normal but did really like it.
From time to time I think about buying a rice cooker but then I wonder about rice dishes like this… I am not sure if you can make them in a rice cooker. Also as much as i would love a fast and easy way to make rice… there is always the dilemma of storage. I have so many kitchen machines and gadgets… I can not imagine trying to find space for yet another.
Before I met my Handsome Hubby, I hated blue cheese. Well, actually that is not exactly an accurate statement. I never had it, because I was convinced I would hate it.
Well his sparkling blue eyes and adorable smile convinced me to try it. WOW!! I was pleasantly surprised how much I liked it. Actually, I was so convinced I would hate it that I was basically stunned that I liked it.
Now I respect the fact that not everybody enjoys blue cheese. I get that. It’s a unique flavor that is not going to appeal to everybody. Handsome Hubby LOVES it and I enjoy it. So I thought I would surprise him with this blue cheese slaw. He really enjoyed it BUT he didn’t realize there was blue cheese in it. Since I had not told him before he ate dinner he didn’t even realize it was in there… so that tells you that the blue cheese in this slaw is not overwhelming. You might even surprise non blue cheese eaters with how much they like this unique slaw recipe.
Now remember, if you hate blue cheese I will not be offended that you won’t be trying this recipe.. I respect your culinary choices… However, if you are ever going to tip your toe into the blue cheese world this might be the one to try… mild enough to be enjoyed by people who do not enjoy the flavorful cheese… and yet yummy for everybody to love!! I am not enjoying the Arizona heat this summer… however even within the most miserable things, goodness can be found. For me that is the foods of summer.
One of the most iconic summer foods is potato salad. Nothing tops off a day of hanging out with your friends while grilling burgers and serving them with cold tasty potato salad!! Well, actually some tasty sangria might top it off … but you know what I mean!!
So many people have an old family recipe but many people, like me, just never had one passed down to them. Well, I am speaking to those folks out there because although this might be one crazy tasty potato salad, it will never compare to Grandma’s potato salad simply because of the sweet family memories surrounding it. However, maybe you are looking for a new recipe to be able to give your kids… well this one is a good one so you might want to give it a try!!
Bring to boil and simmer for 15 to 30 minutes, or until tender when pierced.
Place potatoes in a large bowl.
Cover with plastic wrap or tea towel and let the potatoes steam for 10 minutes.
While potatoes steam in covered bowl, whisk together the mayonnaise, lemon juice, vinegar, salt and pepper, green onions, tarragon and dill together.
When cool enough to handle peel the potatoes. I find this the easiest to do with paper towels and just rub the potato skins right off. Using fresh paper towels as needed. Try and do this safely but quickly because the dressing on this salad does wonders over the hot potatoes.
Chop the potatoes and eggs and add to a large bowl.
Pour the dressing over the potatoes and eggs.
Mix well. Refrigerate the salad for at least an hour prior to serving.
Salt and pepper to taste prior to serving.
Serve cold & Enjoy!!

I am always trying to find healthy and nutritious lunches for Handsome Hubby!!
One that is always a hit is this easy Cucumber and Tomato Salad. But don’t just consider it lunch… this is a tasty and easy dinner. We have also served smaller versions as a side dish as well!!
Also… keep in mind you can have some fun with this recipe as well. Recently we were on a trip and stopped into the most wonderful olive oil and balsamic store. They had so many flavors and options; it was mind blowing!! So you can change up this very simple recipe simply by using different flavored oils or vinegars!! In fact, I have made this using a strawberry balsamic and it was delectable!!

We have been planning a getaway in our RV motorhome to someplace that is cooler than here in the Metro Phoenix area. However, until then we have to take every opportunity to stay cool. Staying cool here in the heat of the summer you see a lot of people going to indoor places like movie theaters and malls… but also eating cool things like sandwiches and cold salads… and in my case we eat a lot of cool cucumber salad, a family favorite we have been making for years and years!!
This salad is tasty year round but it’s extra refreshing when the heat is overwhelming. It also makes a fantastic side dish to any backyard bbq, church social, or work potluck.
Easy and yummy…. it just doesn’t get better than that!!
