I used to watch FoodTV non stop.  Life has gotten much busier and to be honest with you, the shows are not as entertaining as they used to be, at least in my opinion.   Recently, I found a printed recipe that I printed out after watching The Pioneer Woman.

The Pioneer Woman is a huge fan of chicken thighs just like I am.  So when I saw this interesting recipe I wanted to give it a try.  However, I must tell you right now, I made it gluten free by using a gluten free whiskey and a gluten free BBQ sauce.  I also made it in the crockpot simply because we are almost at 110 degrees here in Arizona and I really hate heating up the house with the oven.

It was a nice “bbq-y” kind of vibe.  I enjoyed it a lot and so did my Handsome Hubby.  This recipe wont make it into our common rotation but it’s a great recipe for those craving something different kind of nights!!

Over the holidays, during all of the great parties and get togethers I love to collect recipes from my family and friends who made awesome dishes but that are not gluten free… then I take those collected recipes and make them gluten free.  Now I know a lot of gluten free people would find this horribly depressing… but I find it a golden opportunity.  I always fill up so that I am not hungry or tempted to eat something that I shouldn’t.  Then I make Handsome Hubby try all of the stuff that looks good to me.  The great part of that is then when I make it gluten free he can give me an honest opinion of how it compares to it’s gluten filled counterpart!!

I knew this was one I was going to have to make at home cause it smelled so delicious.  It looked creamy and cheesy and it was the one dish that was served that was completely gobbled up.

Once making it, I completely understood why.  You are going to love this one for sure!!  I know we did.

Making it gluten free was pretty easy.  Most of the ingredients are naturally gluten free.  However, it is important to make sure your roast beef and your Worcestershire Sauce are gluten free.  Of course serving it with gluten free bread / chips is also very important.  Also, avoiding cross contamination is also important so if you serve this at a party where other dips are breads are going to be served that are not gluten free it is important to remind the guest not to dip directing into the dip or share the spoon with anything that isn’t gluten free.

This dip is fantastic and if you are planning any football game appetizers I would totally think of making this dip.  Remember that if you have any leftovers it heats up pretty good but you will want to stir in a tiny bit of milk to thin it out before reheating it.

Let me tell you a little secret too… this dip is so good that we also made it into sandwiches!!   I served it on some Schar gluten free Ciabatta bread and the sandwich was out of this world!!  Yes, it was indulgent but it was also crazy tasty too!!!

But don’t wait for a football or sporting event to make this… cause this dip is so delicious you will want to invite your friends and family over to celebrate a random Tuesday just to get to eat this!!!

I have only been to Miami once and Handsome Hubby enjoyed the most wonderful smelling sandwich.  It was a Cuban sandwich and I wanted to grab it out of his hands and take a huge bite out of it.

Since that trip I have heard so many people say they enjoy this sandwich that I had to recreate it gluten free.  Not only is this Cuban sandwich tasty and gluten free it is also using left over pork roast that was crazy easy and cooked in a crock pork.  When you take your first bite of this cultural favorite and you taste the melted cheese and flavorful pork along with the zesty pickle and the sweet ham, you are going to become a huge fan of making this…. To be able to make this deletable dinner with leftovers will blow your family away!!

This is another recipe in our Slow Cooker Shredded Pork Roast Recipe Series!!  

I need to let you know there is a good and bad side to this recipe…  The good is that it’s not made with deep fried pork.  The bad is that it is not made with deep fried pork.

Let’s face it, deep fried anything taste wonderful.  REALLY wonderful.  However, I like to try and keep a limit on what I deep fry so that way when I do deep fry something I feel less guilty and can enjoy it that much more.

So as I mentioned right away this is part of the shredded pork series.  You start with an easy crock pot pork roast (click HERE for recipe) and you can turn that into some amazing dinners!!  Just think…It’s amazing that you can get 6 servings out of 1/2 lb of shredded pork.  Amazing and wonderful.  I love to create these dishes that can really spread your gluten free grocery budget because as we know we have to pay more for most gluten free products.  Soooo by making this cost effective meal for my family I feel like I am lightening the load on our budget.  Not to mention it’s pretty tasty.
