I have confessed my appreciation and addiction to gravy mixes on this site many times before.  I saw this package of mushroom gravy and knew I had to give it a try.  Being a fan of the shrooms… not the kind your smoke but the kind that is in my cuisine, I was eager to try it.

According to their website this gravy is not only Vegetarian it’s also vegan!  Also in addition to it being gluten free, it’s all natural, fat free, contains no MSG or yeast.  I also learned that this gravy is dairy free, meat free, egg free, and cholesterol free.

That’s good news to a lot of people!!

I will not deny that at first the gravy had a rather off putting color and the flavor was pretty intense.  Now I found that by adding about a tablespoon of milk/cream and that made both issues irrelevant.    However, if you do remember that it’s no longer a vegan or dairy free product… however, I bet the same would work with soy or any other dairy free alternative!!

Handsome Hubby and I have some pretty riveting conversations…

(MJ) Is this zucchini cake we are eating..  would it be considered a zucchini cake, zucchini  patty, or a zucchini fritter?

(HH) Probably more of a patty.

(MJ) I need to eat another to make sure.

Well, based on my research on the Internet it’s actually considered a fritter.  I grew up eating these calling them zucchini cakes.. similar to the salmon cakes my mother would make.  No matter if you call them a zucchini fritter, zucchini cake, or zucchini patty… it’s just plan crispy gluten free goodness dipped in some creamy gluten free ranch dressing!!   One treat I have a hard time turning down.

One thing I have realized since I started writing this blog.  I have made a lot of confessions and admitted to a lot of my “dirty little food secrets.”  Now days people look at you like your are from another planet if you admit to liking something that is fried or not all that healthy for you.

Well, here I am confessing another one of my food truths to you.  My favorite way to have zucchini is either crispy fried zucchini slices or in zucchini fritters!!  Neither are going to win any medals in the healthy category BUT I stand by them as my favorites.  In fact, it’s a craving I get summer, winter, fall, spring.. basically year round you will see these at our dinner table from time to time.

Maybe next time i will tried baking things and see how they come out.  I will keep you posted!!

Okay, you are going to think I am a total geek when I ask this but does anybody else get excited when the weekly grocery advertisements show up in your mailbox??

Hey!!  I warned you!!  I know it’s an odd thing to get excited over but I love seeing what is fresh and what is on sale.  I enjoy making my weekly menu and grocery list around the weekly sales.

This week I noticed that a lot of summer vegetables were on sale.  I really couldn’t figure out what I could make with such a wide variety of vegetables and then it hit me… soup is always the answer.

As I have mentioned before, I don’t care if we are in the 100’s here in the Arizona heat, I just love soup year round… and now with all of these veggies I figure there is no better time to make some minestrone!!

Hubby was surprised when not only was I giving him a meatless (aka Vegetarian) dinner that night.. but technically it was also a Vegan dinner!!  Now of course had I had some parmesan to sprinkle on the top I would have, but I was plum out of it, but he enjoyed it all the same.

Team Broccoli here to report…. hey that other team, Team Cauliflower, they are pretty good.  It has taken me all this time to realize that I do not hate cauliflower.. Although this has been a revelation of sorts for me I can still assure you that I will NOT be eating it raw on a veggie tray… remember ..baby steps!!

Today I have some fun facts about my new friend the Cauliflower!!!

Cauliflower is low in calories (the cauliflower itself… not this recipe because its loaded with cheese)

Cauliflower is an excellent source of vitamin C

Orange cauliflower is slightly sweet and rich in beta carotene

Cauliflower does not freeze well

Because cauliflower is rich in vitamin K, it has many anti-inflammatory benefits!

I am very picky when it comes to tomato soups.  Not because I am a snob about the soup, I just never really enjoyed tomato soups till about 10 years ago  when I had one at a restaurant that I just loved.  It was thick and creamy and full of cream.  LOVE IT!!

Right now, at this time of the year, a lot of people are trying to eat healthier.  So I was up to the challenge of making a tomato soup that did not have cream.  Oh sure I could make one, but could I make on that  I enjoyed without the cream??

Well it took awhile but I finally got it.  I am thrilled to share this recipe with you today.  So the soup is dairy free and very healthy.  But the crostini is not.  So I admit it… I feel less guilty about the garlic cheddar crostini because the soup is soooooooooo healthy!!   The beans, when blended give the soup a nice creamy AND gives you a boost of protein and fiber!  Nice!  How can a soup be so yummy and not have cream?

Please note that the soup itself is dairy free… only the additional, optional garlic cheddar crostini makes it have dairy.  This soup is fantastic even without the crostini so if you need to be dairy free this is going to be a yummy soup for you!
